I'm not too fond of meat every since I had my daughter 4yrs ago. I'm hispanic and ever since I had my daughter, I've had hard time preparing meals because most of our dishes consist of some type of meat. I find myself having a hard time at the grocery store buying food to prepare meals. I'm not into buying frozen food either.

Good idea to stop having meat in your diet! I've been a Vegan now for a year...I eat and use NO animal products. It's amazing how great you can feel and how healthy you can be without any animal products! You can cook any Hispanic dishes you want without meat. Instead of putting the meat into the dish, use textured vegetable protein. This you can buy in bags at any health food store...Whole Foods is usually where I go. Or you can use extra hard tofu...this is a soy product. Or tempeh. Fry the tofu or the tempeh with some olive oil and sprinkle some comino on them while frying. You can cook the tofu longer...it will keep its consistency. The tempeh tends to turn hard so fry it and use it as soon as possible. There are some marvelous soy cheeses you can use. I love the jalapeno one to put on my enchiladas...I construct them the usual way but put some of the comino-fried tofu inside. I sprinkle the jalapeno cheese on the top and bake as usual. I love using the red corn tortillas.
We live in San Antonio, Texas. Although I am of Scandinavian heritage, I love Mexican food. I have cooked my Vegan Mexican food for quite a few Hispanic friends, and they love it! So, this has stood the test!

Hispanic food is some of the easiest to turn vegetarian ~ just leave out the meat. Rice and beans eaten together provide every bit of complex protein that we need.

I'm like you. Was getting fed of eating meat with no appetite for it but soon made the switch to no meat in my diet at all.
I recently went vegetarian but it takes trial and error to see what you like. On of my favourite things to make is aubergine (eggplant) "meat"balls. You eat it with tomato/marina sauce and spaghetti and I'm sure you'll like it. Also TVP is used just like mince (meat) but it's 50% protein, 0.5% fat and is really cheap. I'm not too keen on tofu unless it's with a spicy dish.

ummmm. eat a salad. I don't really know what you are asking sorry...if you are asking about some vegetarian dishes then tofu is vegetarian, there are vegetarian hot dogs and lots of stuff like that.
