I'n not yet sure if the event will be in the afternoon or evening but I'm looking for ideas for what to have in the buffet. The event will be in the summer so I don't want alot of hot food ideas.

I love the Salad Bar idea! Any ideas how to make a great spread? So far I have sliced tomato with basil in a balsamic dressing, tossed salad, bean salad, fruit salad, pasta salad. Any topping ideas?

If you want something unique and exciting try a nice gazpacho. Gazpacho is a cold soup, great for summer dining. My favorite recipie is a mango gazpacho filled with fresh fruit. It is sweet and refreshing!
INGREDIENTS:
2 cups 1/4-inch-diced fresh mangoes
2 cups orange juice
2 tablespoons extra-virgin olive oil
1 seedless cucumber, cut into 1/4-inch dice
1 small red bell pepper, seeded and cut into 1/4-inch dice
1 small onion, cut into 1/4-inch dice
2 medium garlic cloves, minced
1 small jalapeno pepper, seeded and minced (optional)
3 tablespoons fresh lime juice
2 tablespoons chopped fresh parsley, basil or cilantro
Salt and freshly ground black pepper
--------------------------------------------------------------------------------
DIRECTIONS:
Process mangoes, orange juice and oil in a blender or food processor until pureed. Transfer to a medium bowl, along with remaining ingredients. Season with salt and pepper to taste. Refrigerate until ready to serve. (Can be made several hours before serving.)

I'm not a vegetarian, and I went to a vegetarian reception a while ago and I thought the food was great. But, I'm a little more open to trying new things. A vegetarian meal I love is a fried risotto cake on top of a spicy tomato sauce, with grilled portabella. Its filling, has a lot of flavor, and tastes great. Good luck!

I am assuming you are not vegan, if you are, please forgive this response. A great cheese display would be nice. Also, an antipasti vegetable display with roasted veggies would be nice with great breads. There are so many non meat items that would fit with the format.Fruit kebabs, hot spinach artichoke dip with crackers, built crostini or bruschetta, frittata wedges or flat spanish ometette wedges ( tortilla its called in Spain) try lookin up ' Tapas" so many ideas. I hope you find what you arelooking for.

Try a 7 layer dip with beans avocado tomatoes sour cream ya know the good stuff broccoli and cheese rice casserole using cream of mushroom soup cheese and broccoli

There are TONS of things you can do!
Several pasta salads. Mix them up with different sauces or dressing. Toss in grilled vegetable.
Marinated veg salad
Grilled veg kabobs
Prepacked "lunchmeat" can be very good. Display on a plate with organic cheeses and your favorite crackers
Eggplant salad
Couscous
Various flavors of hummus on platters with pita triangles
Bagels with toppings
Mexican plate with chips, dips, salsa, green onions, sour cream.
"Fake" chili made of TVP... or just bean-only chili jazzed up with onions and a variety of beans
3 bean salad
rice-and-beans (cold or hot) with your favorite sauce/flavoring

How about just a real nice salad bar? I am sure you can put one together without meat quite well. Don't forget the Peppercorn Ranch dressing!

try chips and salsa, guacamole, salads, vegetarian pate, you could do veggie burgers, cold pasta salads, fruit salad, cheese plate, finger food sandwiches, simple raw vegetables with dip....

Tortilla chips with hummus, guacamole and salsa.
You could have a garden burger/veggie burger with different veggie toppings.
Don't forget lots of fresh fruit!
