Vegan Pizza
This pizza is so tasty that you will not miss the cheese!
Ingredients:
for the base:
500g./1 lb./3 cups plain flour, white or wholemeal
1 packet of easy blend dried yeast
200 ml./1 cup of warm water but keep adding until you get a good dough
topping:
1 tin chopped tomatoes (approx. 400g/14oz.)
2 tablespoons dried mixed herbs
2 tablespoons olive or sunflower oil
salt and pepper to taste
1 small tin of mushrooms or/and sweetcorn (optional)
sesame seeds for sprinkling on top
Mix the flour with the yeast and add the water gradually. Mix well (with your hands is best) and then knead for a couple of minutes until the dough is fairly smooth. Place on a large greased baking tray and flatten into desired shape (ie. - circle). Leave in a warm place while you prepare the topping: Mix together the tomatoes, herbs, oil and seasoning in a bowl and then spread over the pizza base. If using the mushrooms/sweetcorn - coat them in a little olive oil and arrange on the top of the pizza. Sprinkle with sesame seeds and bake at 200 C/400 F for 15 to 20 minutes until ready.
Variations - obviously you can add whatever toppings you like to the basic tomato mixture - olives, vegan 'cheeses', pineapple chunks, vegan meat substitutes etc. You can also vary the herbs used, add garlic and onion or add herbs or seeds to the base. If you want a softer base you can leave the dough to rise for half an hour before adding the toppings but we find it great without doing that.

While I'm not vegan or vegetarian, I have many recipes in my repertoire for when I'm looking for something a little lighter. Try splitting a red pepper, add some slivers of garlic, one or two halved cherry tomatoes and some (in your case vegan) tapenade and roasting them with a good glug of olive oil. Delicious and light and perfect, served with a lightly dressed endive salad (with a mustard dressing) the sweetness of the peppers balances the bitter endive perfectly.

these are my favorite everyday recipes.
for great vegan spaghetti:
-cook a bunch of (mushrooms) in a pot with (garlic), (italian seasonings), and a little (olive oil). if you like, add some (white wine).
-the mushrooms will make a lot of juice. add enough (tvp) to absorb the juice. tvp is a vegetable protein that looks like granola, but when wet, it has about the texture of ground beef. it will thicken your sauce and add protein. it has practically no flavor.
-add a can of (crushed tomatoes) and a can of (tomato sauce).
-boil (vegan spaghetti noodles)
-top spaghetti with (vegan grated topping). it tastes just like parmesan, but with no dairy products.
if you're really in a hurry, try just noodles with olive oil, garlic, seasonings, and vegan topping, no sauce required.
for vegan fajitas:
-heat (vegetarian refried beans), and add (hot sauce) for spiciness. most refried beans have lard, so be sure they're vegetarian!
-thinly slice (bell peppers) and (onions). sautee them in (olive oil).
-warm (vegan flour tortillas).
-assemble with toppings like (sliced olives), (lettuce), and (salsa).
pasta salad:
-slightly undercook (spiral pasta). it will absorb more moisture from the salad.
-put in large bowl and mix in (frozen peas), (sliced olives), (thinly sliced mushrooms), (diced green peppers), (grated carrots), and (zesty italian dressing), to taste. just leave out any veggies you don't like, and add anything extra that sounds good to you. (salt and pepper) optional. keep chilled until serving.
my own ramen noodle invention with no name:
-cook (oriental ramen noodles), but only add half the seasoning packet. oriental style is the only vegan flavor of ramen.
-drain out most of the water.
-add any veggies you have on hand, much like the above list. (frozen peas), (mushrooms), and (peppers) are great.
-cook until veggies are heated through and most water is absorbed. eat with chopsticks.
simple meat replacement sandwiches are always good. get frozen boca chick'n patties, in the red box, at the grocery store. the spicy ones are my favorite. you can microwave them for a minute or two, and make a sandwich with bread, veganaise (a great replacement for mayo), lettuce, and mustard. or try tofurky, fake turkey slices, for cold sandwiches. they're really great with sliced avocado.
