Picky eaters are really simple to please with two main ingredients and that is beef and noodles. Sure you could do hamburger helper but if you make your own beef stroganoff it's so easy.
You can use 1 1/2 lbs of ground meat or you can get stew meat and cook it as well. Either will work great.
1 large bag of egg noodles
1 brick of cream cheese
1 16oz sour cream
2 beef bouillon cubes
Start water for egg noodles salt the water and once boiling cook noodles for 7 1/2 minutes or to your taste.
Cook the meat until done then mix 1/4 cup of hot water and dissolve the boullion, pour over meat and simmer for 10 minutes
Once the noodles and meat are done drain noodle of course drain any juice left from meat. Put meat noodles, cream cheese and sour cream together and mix well. Taste again for salt and pepper...enjoy

If they're that picky & difficult, I'd just go for grilled burgers or chicken. That satisfies your low-carb guest. Then throw in a side of roasted potatoes (cube, toss in olive oil & dried thyme, put in a baking pan & bake at 450 degrees for about 20 min) and a green salad or cole slaw, and you're good to go. Fast & easy.

You can buy some great IQF(individually quick frozen) fish for amazingly cheap prices. I recently bought 4-6oz. salmon and tuna fillets for a little more than $1.00 ea. Also buy vegetables that are in season, you can get pretty creative with them. Rice is also an inexpensive yet flexible dish(stir-fry, egg fried rice, filled peppers, even rice pudding). An example of a relatively cheap meal that I prepared recently: -Pan fried salmon -Tomato basil rice(canned tomato juice, dried basil) -Fried Zuccinni(sliced, salt n pepper, sauted in butter)

Stuffed baked potatoes with all the trimmings (sour cream, bacon bits, shallots, cheese) and they can be responsible for trimming their own dinner! If you need a "meat" of some sort, just oven-bake some chicken wings. (coat the wings with flour and season; put them on a greased tray and stick in the oven at 400 degrees for about 35-40 minutes until brown.)
