i think you might mean faloodeh, a persian dessert made with rice noodles with coarsely shaved ice flavoured with rose water and lemon juice. i don't know an exact recipe for it

FALOODA: It's actually an INDIAN dessert

An exotic Indian milk-based drink flavoured with rose syrup (sharbat gulab) and named for the strands of cornflour vermicelli that float in it. The vermicelli are not easy to make at home. An acceptable substitute is agar-agar jelly, flavoured with rose and coloured green or red.

1 teaspoon basil seeds
rooh afza syrup or rose syrup
iced water or cold milk
2 tablespoons psyllium husks*
crushed ice
agar-agar jelly (optional)




Soak basil seeds in 1 cup warm water for 10 minutes until they develop a slippery coating.

For each tall glass pour in 2 or 3 tablespoons of syrup, almost fill the glass with water or milk and sprinkle with a teaspoon of psyllium husks. Stir in a teaspoon of the soaked basil seeds and add crushed ice. If liked, small dice of agar-agar jelly may also be added.

Syrup for Falooda

The scented syrup is available in Asian shops, but is easy enough to make. Cool and store in a bottle in the refrigerator.

1 kg/2 lb/4 cups white sugar
750 ml/1 1/2 pints/3cups water
30 drops essence of rose
15 drops essence of kewra
red food colouring

Put sugar and water into a heavy pan and dissolve sugar over gentle heat. Cool, then add flavouring and enough red food colouring to give a strong colour as it will be diluted with many times its volume of milk or water.
