I'm on a strict diet that requires three cups of six different veggies for lunch. My favorite so far: tomatoe, carrot, cucumber, celery, califlower, & zuccini with 6 sliced green olives stuffed with pimento and a bit of the olive juice over everything.

Try chopping and mixing with various herbs and spices. Go with a mexican blend and work some cumin and cilantro in. Want italian? How about basil and oregano. Spicy? Work in some pepper flakes!

Also, try chopping the veggies in different shapes: small chunks. large chunks, thin strips, chips, etc. The visual differences will be stimulating to your eyes as well as your taste buds!

There's a book called "The Uncook Book" that's about preparing raw foods. Check it out!

You must be kidding... You don't need recipes for raw vegetables, you need imagination and maybe just a little inspiration.

How about those salads? With your six veggies you can switch out many combinations and adding different natural juices from pureed vegetables or fruits, dressings can also become endless.
Something to consider is the way you cut or present those veggies. An example would be if you shred them evenly and try a cole slaw. Also coarsely ground and seasoned lightly, you could wrap them in lettuce leafs like fancy wrap sandwiches.

I can tell you that there is a book out at Barnes and Noble bookstore called RAW . This man wrote this book with all kinds of raw food recipes. He lost weight and is a chef and a lot of the food has everything from raw main course to desserts. I am gonna buy it.If we ate raw food we would have the enzymes etc. that cooking kills.

Try those same ones with olive oil and either balsamic or red wine vinegar, salt, and pepper. Add a little minced garlic for a kick. Make different vinaigrette's and change up the veggies with cabbage, spinach, broccoli, different colored peppers, yellow squash, onion, and artichokes.

7 layer mexican

you can alter it for vegitarian purposes
layer of vegetarian refried beans
layer of cream cheese
layer of red onions
layer of salsa
layer of chopped olives (black or green)
layer of chopped lettuce(any variety)
layer of chopped tomatoe
sprinkle with jalapenos(optional)
you could go light on the sauces and heavier on the veggies to make it more like a salad!

WHAT ABOUT LOW OR FAT FREE BLUE CHEESE DRESSING OR ITALIAN DRESSING....YOU CAN ALSO TRY BROCCOLI AND STRING BEANS[ FRESH] LETTUCE IS GREAT AND YOU CAN HAVE TONS OF IT AS ITS MOSTLY WATER......MUSHROOMS ARE FILLING .....
