1 can of rotel tomatoes
1 small velvetta-cubed.
microwave or put in crockpot until cheese melts.
serve with tortilla chips.

Yeah- mix chili with cheese for a good nacho dip. Or to make chili dogs.
You can buy chili in the can at the grocery store! Or use your own chili.
Also you can make Mexican dip:
One bag of shredded Mexican cheese
One jar salsa (the thicker the better)
One medium container sour cream
Mix all together serve with tortilla chips.
You can use cheese whiz or cheese dip and mix in things you like for a dip too!
I use green olives or jalapenos. Mix it up and have fun!

Make a roux.
2 parts butter
2 parts flour
For instance, you could use 2 tablespoons each and then when they are mixed and cooked for about 10 minutes over a low heat being constantlu stirred, you would add 2 cups milk, blend it well
Add:
2 cups cheese, you pick; cheddar, spicy jack...anything you want
add salt and pepper, chilis, jalapeno, tomato, anything you want.
Add to nachos, eat with chips, anything you want. Use with shredded chicken inside burritos.

This was from one of my favorite resturants as a kid:
Make a roux.
3 tablespoons butter
3 tablespoons flour
1 jar of green sauce ( http://www.lavictoria.com/grn%20taco%20sce.htm )
1 jar roasted red peppers
1 block of colby cheese
In a sauce pan, melt the butter and flour, then melt cheese in the butter / flour add peppers and sauce. set on low.
Hmmm good!

i learned this from my uncle and it's really good.
you should have 1 cup of philadelphia's cream cheese and 1 can of hormel's chili with or without beans. you put them together ina bowl and heat it in the microwave for about a minute and a half then give it a little mix and put it back for another minute and a half. it's really good with tostitos chips!
