Hey, I know what you mean! I have lotsof things to eat now that I have gotten used to being a vegetarian. But at first I felt just like you.
Sure there are replacements for meat. Just buy the veggie hot dogs (Morningstar -they are so good! these hot dogs!), veggie burgers (the best are Boca brand, because morningstar burgers are gross), Boca Spicy Chicken patties, Morningstar Chicken Nuggets and Morningstar corn dogs! These are all so yummy and amazing and healthy you will wonder why you haven't eaten these over regular meat all along. You can find these in the frozen food section. It should all be in one little area together, usually where the frozen boxed cakes and frozen fruit juice drink cans are.
There are lots of other things. Before I became a vegetarian, Big Macs used to be my fave thing from McDonalds, but now, I just order the veggie Big Mac, (you have to tell them what you want on it though) I always say " I want a number 1 with no meat add tomato (and since there are two meat patties, that equals 2 tomato slices) and I exchange the tomato for the meat. Don't let them charge you extra for the tomato when you aren't using the meat. I do the same thing for every other restaurant. Burger King has a veggie burger, but last time I ate there it was gross, the burger was very thick and hard to chew! Yuck! But that is just how ours is. You can use this logic with any fast food restaurant.
You can have so much fun with vegetarianism, because for mexican food I just always replace the meat with refried beans, and add all of the veggies, all types of pastas, grilled cheeses, etc.
But I tell you, the best thing for replacement of meat is the veggie burgers etc, because they are great if you are looking for something like that. Or just make some soup beans and cornbread, or some potato soup!
There are thousands of things to make!

Well yes there is! I am not sure where you are from but there are tons of options out there now. Its a great time to be a non meat eater! First off go to your grocers freezer. In most "normal" grocery stores they are some fine "chicken products" by company's out west. (California) The ones I know are Boca, Quorn, Morning Star, Gardenburger and there are a few others as well. Every one of those products make either vegetarian or vegan foods. They will say vegan on the box if they are. All these things are way easy and you can make up a potato or thaw out some frozen veggies and you have dinner in less then 15 minutes.
Now for some of my favorites it gets a little difficult because I have 2 vegetarian based grocery stores near me so my options are a lot greater. (not trying to brag) Look on the Internet and see if there is a "whole foods market" near you they are popping up all over the place. They rock. One of my many favorite things there is there "Seitan" products. That is a gluten of sorts that has a consistency of chicken. From there you can make all sorts of wonderful things like "chix" and dumplings, "chix" pot pies. Put in chili. The possibilities are endless. This will also allow you no modify other meal possibilities that involve real chicken.
I would also recomend getting some vegetarian cookbooks. There are many out there. One of my favorites it "Vegetarian Times" complete cookbook. Its well worth the price of the book. Best wishes and good luck!

Here are two sites that I love. I'm not too sure how easy thing are to cook and prepare (I'm a chef so they're all a piece of cake for me, hope you have good luck). With the way I have absolutely no probs, I'd say most of the recipes are really simple. There are different kinds of vegetarians, so if you're one who will eat poultry you can replace ground beef with ground turkey in any recipe. I don't eat poultry, but I do eat fish. So I replace regular beef hot dogs with salmon dogs. I find them at the World Market, but they're becoming more common. They taste way better than normal hot dogs, my husband and boys (who aren't vegetarians) eat those like they're going out of style. You can try an all veggie stir fry, that usually goes over well with my family. I printed the recipe off the first link. I'll edit my answer if I can find the site again that uses recipes that replace meat with nuts so you're still getting your proteins.

Oooo.. lemme tell you, i have a great time with vegetarianism. Pizza is always good, get one with peppers or onions or anything you want! (ex the pepperoni and sausage, obviously). Pastas are great, you can get some great nutriants from modified Italian meals. Instead of chicken parmigana, have eggplant parm (it'll be different but it is yummy). Salad bars help out too. Taco salads with refried beans tastes just as good as the beef or chicken. It's hard, but get a book. There are many great vegetarian books out there. I have "The Complete Idiot's Guide to Being a Vegetarian", it has recipes and detox info. Also there are some amazing cook books, just go to amazon.com or barnesandnoble.com

Lemon Rice
Ingredients:
1 cup Rice
2 tsp Oil
Salt to taste
½ tsp Ginger
2 Green Chilli
½ tsp Turmeric
2 tsp Urad Daal
Coriander leaves
2 tsp Chana Daal
5 tsp Lemon juice
4 whole Red Chilli
Some Curry leaves
1 tsp Mustard seeds
A pinch of Asafoetida
Method:
Boil the rice, drain and keep aside.
Heat the oil in a vessel. Add mustard seeds, asafoetida, curry leaves, ginger, chillies, urad daal, chana daal and the turmeric.
Add the lemon juice, salt, water and simmer for 3 minutes.
Add the rice and mix well. Finally garnish with coriander.

Try a pita pocket. What ever you make a salad out of, then put in in a pita with a great spread like hummus. If you want you can put some of your beans in it be creative with the spices. I've learned that white pepper is great on veggies. If you don't already use it try sea salt, for some reason it brings a lot more flavor to your food.

I think you need to ensure that you're getting 5-10 servings of fruits and vegetables (ideally, different colors) each day, and that when you do eat carbohydrates (pizza, pasta, bread, rice, etc) that they're whole-grains, not simple white starches. Your diet sounds dangerously UNhealthy due to a lack of nutrients from fruits and vegetables.
I suggest eating more salads and more home-made vegetable soups. You can also make simple vegetable quiches if you buy a pre-made pie crust. Incorporate more nuts and seeds into your diet, and include protein-rich vegetables like broccoli and spinach.
Being a vegetarian isn't an excuse to eat carbs all day- you NEED to make sure you're taking in fruits and vegetables!

Vegetarian lasagna. Layer like regular lasagna only instead of the meat slice summer squash really thin and layer, shred carrots and spread over the ricotta cheese and chop broccoli really fine and spread that over the cheese. Mix l/4 cup of Parmasian cheese with the ricotta and two eggs. Just keep layering. This dish is full of protein and calcium and is delicious. Oh and if you like marinara sauce put a little on the bottom of the pan before layering and a little on the top. Good potassium.

Nuts .. seriously. Peanuts, pecans, cashews and almonds are a great source of protein, but watch those fat grams! Vegetarians can gain weight, too. Go to your local health food store or vegetarian market and look for TVP ( texturixed vegetable protein ). This stuff is a great sub for ground meats in recipes, and will up your protein intake without adding fat. The frozen veggie-burgers at your regular grocery store are actually very good, also.

Try a grilled portobello mushroom burger.
marinate portobello mushroom heads in italian dressing
Grill for about 5mins each side
Also try roasted egg plant. Cut eggplant in slices (about 1/4 inch thick) brush both sides w/ olive oil and salt. Roast in broiler until brown. Great in lasagna, in pita sandwiches with hummos, alone,
Great souce of protein is a peruvian grain called Quinoa (usually available at most natural food stores). You let the grains soak for 3 hrs and then cover in water and cook for 20 mins (simmer). Toss in salads or use as replacement for couscous.
