Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted ( = 15 g )
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.
A Clone of Benihana's Fried Rice
Ingredients:
4 cup cooked converted or parboiled rice (1 cup uncooked)
1 cup frozen peas, thawed
4 tablespoons finely grated carrot
2 x eggs, beaten
1/2 cup diced green onion
1 1/2 tablespoons butter
2 tablespoons soy sauce
salt
pepper
Method:
Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator. Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.
When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together. Melt 1 1/2 tablespoons of butter in a large frying pan over medium/high heat.
When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often.
This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. Keep this refrigerated until you are ready to fry it in the butter. That's when you add the salt, pepper and remaining soy sauce.

This is called Caccioci. (kind of pronounced cagoach). Wash and cut up into chunks a couple zuccinis, a couple potatoes after being peeled, a few celery stalks. Slice up some onion. Put a little bit of some oil (I use olive or canola) in bottom of a saucepan and heat it a bit then toss in the onions and sautee them. Then add all the other veggies. Add a bit of pepper and sea or kosher salt. Cover the pan on a medium heat and just turn with a wooden spoon every few minutes. The zuccini releases moisture into the mixture as it cooks. When it seems that the potatoes are getting close to being on the softer side... add a can of TOMATO SAUCE, remove lid and simmer a short while. VOILA! YUMMY YUMMY. It is like a vegetable stew of sorts I would say. I serve with a garden salad and some fresh crusty bread. Very Very Tasty and healthful. Only takes about 30 minutes from pot to table.

cook spaghetti squash and then scoop it from the skin it does look like spaghetti then add you favorite red sauce over it makes a great substitute for pasta........next is cut up cauliflower in chunks and boil it then strain place in a large mixing bowl add roasted garlic and sour cream or even cream cheese and mix to a mash its a great mashed potato substitute. and zuekeeny and yellow squash cut lengthwise in 1/4ers and then marinate in Italian dressing then grill to tender..
