Yummy! Especially Aji De Gallina is super delicious.
Here's a recipe for it:
"Using nuts as a thickening ingredient, as well as for flavour, is a common thing to do throughout Latin America. Traditionally this dish would be prepared with yellow potatoes, which may not be
readily available outside of Peru. If you can't find a "Yukon gold" potato, a baking potato will do."
AJI DE GALLINA
Serves 4-6. Heat scale: Medium
1 3-1/2-pound chicken, quartered
6 pieces white bread, crusts removed
2 large onions, diced
3 stalks celery, diced
2 teaspoons minced garlic
6 fresh 'Aji Amarillo', stems and seeds removed, diced (or substitute red jalapenos)
2 tablespoons butter
1 cup chopped pecan nuts
1 15-ounce can evaporated milk
1/4 cup grated Parmesan cheese
2 potatoes, peeled and boiled, cut in wedges
Salt and pepper to taste
3 hard-cooked eggs, cut in wedges for garnish
Pitted black olives
1. Cover chicken with water, bring to a boil, reduce the heat and simmer until the chicken is tender, skimming off any foam that forms.
2. Remove chicken and let cool. Strain and reserve the broth. Remove bones and skin and shred the meat. Soak the bread in 1/2 cup of the reserved broth and, when soft, mash with a fork to form a thick paste.
3. Saute onion, garlic and chiles in the butter until onions are golden. Add 1 cup of the remaining chicken broth and the soaked bread mixture and bring to a boil.
4. Add the chicken, pecans, milk, and Parmesan cheese, reduce the heat and cook unfil the mixture thickens, takes about 5 minutes. Season with salt and pepper to taste.
5. To serve, arrange potatoes on a platter, top with the sauce and garnish with the egg wedges and olives.

I saw on the food network, i think on the show "A chef's Tour," that Peruvians served Fried Guinea Pigs on a stick. It was fried whole and it didn't look too bad.

I am not peruvian I am Colombian and I love Peruvian food. Papa a la Huancaina, Leche de Tigre, Aji de Gallina.. etc.. I love it!!

i love it, it's easy to cook and delicious.
my favorite is ceviche mixto (every country has its own way to prepare that food) and lomo saltado. you need to try it.
don't know where you live but in CA. there is a really good peruvian restaurant.

It is actually very good... if you like seafood try Ceviche Mixto or Mahi Mahi Ceviche with Tosotones (Fried Greedn Plantains).. you may also try Shrimp Ceviche or Grilled Octopus with Aji....
