Bulkogi (Korean BBQ)

INGREDIENTS:
1 LB sirlon steak
5 tablespoons soy sauce
3 tablespoons sugar
2 tablespoons water or wine
2 tablespoons minced onion
1 tablespoon minced garlic
1 tablespoon sesame seed oil
1 teaspoon salt
1 teaspoon black pepper

DIRECTIONS:
Mix all the ingredients together except the beef. Marinade the beef for at least one hour. Discard the marinade and grill the beef. Serve with lettuce leaves and hot pepper paste.

Kim bab (Korean style roll)

serves 4

4 cups bab (cooked rice)

4 sheets kim (seaweed sheet, nori)

2 eggs

1/2 carrot

4 long pieces dan moo ji (pickled yellow radish)

4 oz beef

8 heads spinach

2 imitation crab meats (6-7 inches length)

1/2 sheet square eo mook (fried fish paste)

beef marinade : 1 tsp soy sauce, 1/2 tsp sugar, 1/2 tsp sesame oil, 1/4 tsp minced garlic, sesame seeds, pepper

dan chot mool : 1/2 tsp sugar, 1/2 tsp rice vinegar, 1/4 tsp soy sauce, 1/4 tsp sesame oil, 1/4 tsp sesame seeds

eo mook yang nyeom : 1/2 tsp soy sauce, 1/2 tsp sugar, pepper

2 tbsp sesame oil

1 tbsp sesame seeds
Eggs - mix, add salt, make a pancake, slice 1/2 inch width.
Carrot - thin julienne, saute in a pan with salt.
Dan moo ji (pickled yellow radish) - julienne, mach to the kim(nori) length.
Beef - marinade for 5 minutes, saute in a pan.
Spinach - Cut heads, blanch, add tiny bit of soy sauce, sugar, sesame oil. Mix well.
Imitation crab meats - cut in half, lengthwise.
Eo mook (fried fish paste) - cut into 1/2 inch width long strips.
Boil eo mook yang nyeom, cook eo mook to absorb liquid.

Cool rice slightly.
Add dan chot mool, mix well.

On a bamboo stick roller, put kim(nori).
Add rice 2/3 of kim.
Put each ingredients.
Roll carefully.
Spread sesame oil, sprinkle sesame seeds.
With sharp knife, slice 1/2 inch thick.

Leche Quemada (Burnt Milk Fudge)
Ingredients:
2 cups pecan pieces
1/2 cup margarine
2/3 cup packed brown sugar
1 cup sweetened condensed milk
1 teaspoon vanilla extract
Butter an 8-by-8-by-2 inch pan (metal is OK) and set aside. Place pecans in a 10-inch glass pie plate. Microwave pecans on high for 8 minutes, or until roasted. Stop every two minutes to stir the pecans.
Set the pecans aside. Now place the 1/2 cup (usually one stick) of margarine in a 2-quart glass measure or round heatproof glass casserole. Only use heatproof glass such as Pyrex as the candy mixture will get VERY HOT. Microwave the margarine on high for 1 minutes or until melted. Then stir in the brown sugar and the milk. Return to microwave and cook for 7 to 8 minutes, stopping to stir the mixture with a wooden spoon every two minutes. Beat the mixture until it begins to stiffen. Then add the vanilla and roasted pecans. Pour the entire mixture into the greased pan and allow it to cool. Once cooled, cut into squares and serve.

This stuff is the BOMB!! But it's not healthy.

Italian sausage pie -
3/4 lbs dry sausage
1 1/2 lbs fresh mozzarella
black pepper
3/4 lbs suprisada
9 or less eggs......That is the filling

Crust (makes 2)
5 cups flour
6 eggs
2 teaspoons spry
3 teaspoon baking powder
pinch of salt and pepper

mix all filling together...roll out crust and bake at 375 till crust brown

5 roma tomatoes
1 jalepeno
1 medium onion
chopped cilantro (as much as you like, i like a little)
juice of one lemon or lime

chop everything, let sit in fridge at least overnight. VIOLA! makes chips happy your pooper not so happy.

Recipes From the Middle East:

Mo-lou-he-ya (Jute Leaves)

1 bunch of fresh jute leaves (wash and put in blender with a bit of water)
1 onion
3 Tbsp oil
1 chicken cut into pieces and washed in vinger
4 garlic cloves
2 medium tomato
1 tsp black pepper
1 tbsp cumin
1 tbsp coriander
10 garlic cloves, chopped finely
salt to taste

1.Chop onion and sauté in oil until almost golden brown.
2.Add chicken pieces to onion and let brown; stirring frequently.
3.Puree the tomato and garlic. Add to chicken mixture. Add black pepper, cumin, coriander. Let cook for about 10 minutes.
4.Add enough water to cover the chicken- let boil about ½ hour. Add salt. Add more water if necessary. Cook an additional ½ hour.
5.Brown garlic cloves in oil; in separate pan.
6.Add jute leaves to boiling chicken mixture, then add hot garlic from frying pan to jute leaves mixture, cook about 7 minutes (do not over cook as it will turn into water).

Serve with white rice and pita bread.

Chicken and Couscous

Couscous Water:Couscous Mixture:
1 cinnimon bark1 finely chopped onion
2 cardamon cloves½ tsp black lemon (ground)
4 black pepper cloves1 tsp cumin
½ tsp curry¼ cup olive oil

Put all items in a bowl and add Add the first couscous mixture to
Couscous. Then add boiling this mixture and mix well.
Water. Let stand about ten mintues.

Chicken Mixture:
1 chicken cut into pieces
1 onion
4 garlic sliced
3 tbsp salt
2 small ginger bark
4 tbsp olive oil
½ tsp ground black pepper
1 tbsp curry powder
½ tsp ginger powder
1 tbsp cumin powder
1 maggie
1 tomato diced very small
zucchini, carrots, eggplant, potato cubed, green pepper

In olive oil sauté the onion and garlic. Once browned, add chicken pieces, and brown the chicken. Add salt, ginger, pepper, curry, ginger powder, cumin, and Maggie. Let boil for about 35 minutes. Add the cubed veggies and cook until done. Once done you should have a small amount of sauce left. Serve the chicken mixture on top of the hot couscous.

Chicken Machbous

2 tbsp oil
2 large onions, sliced
1 tsp turmeric
1 tbsp mixed spices
1 chicken in pieces
1.5 cups pureed tomato (fresh)
2 tbsp tomato paste
½ tsp ground black lemon or 1 strip of lemon rind
2 pieces cinnamon bark
6 cardamom pods
3 tbsp salt
2.5 cups water
2 cups rice

1.Fry onions in oil until golden brown. Add turmeric and mixed spices and cook for three minutes.
2.Add chicken pieces and fry until light brown in colour. Add tomato, tomato paste, black lemon, cinnamon, cardamom pods, and salt. Mix well.
3.Add water and simmer on low heat for 45 minutes.
4.Wash rice until water runs clear. Drain.
5.Stir rice gently into sauce pan (with chicken pieces). Bring to a boil, then reduce heat and cook until rice is done. During the cooking process stir twice (because the rice is not being cooked in just water the rice takes longer to cook)
6.Remove from heat and set aside for 8 minutes. Serve hot.
