I cannot remember the name of this yummy little snack, but I remember buying them at the little mom-&-pop stores. They are made from papaya, and vinegar I think. They taste kind of sweet and hot; and they are bright yellow in color, with little duni peppers. Can someone pleeeze help me I am going through total withdrawals!!

Pickled Green Papaya
based on a recipe by Joe Pangalinan of Yigo, Guam

Ingredients:
1 medium papaya, on the verge of ripening ½ teaspoon ground black pepper
1 cup distilled white vinegar ¼ teaspoon salt
1 cup water
1 Tbsp. sugar 2 or 3 Boonie Peppers, if desired
Instructions:
Peel the papaya, cut it in half lengthwise and remove the seeds. Slice the papaya lengthwise, as you might do with carrot sticks.

Place the papaya sticks upright in a clean mason jar. Add sugar, salt, pepper, and boonie peppers if desired to the jar. Fill the jar with approx. equal amounts of vinegar and water to cover the papaya.

Cover the jar tightly with its lid. Store the jar in the refrigerator for a week, shaking the jar at least once a day to mix the spices.

Editor's Notes:

Don't be stingy with the black pepper. You'll be surprised how nicely it brings out the sweetness of the papaya.

Sorry I can't help with the name of that goody, I don't remember it. I lived there (Tamuning) for a few years, late 80's & early 90's, and I still miss some of the local foods!

As for the spice that makes foods yellow...Turmeric?
