There are many types of white cheese-
This is from the La Chona website:

Asadero - A flavorful, Mexican melting cheese, Asadero has a creamy, smooth texture with a sweet, buttery flavor . Excellent for melting, Asadero is also ideal for baking because its stronger flavor adds to the appeal of a baked dish!

Queso Fresco-Meaning "fresh" in Spanish; Fresco is wonderful when crumbled over tacos, enchiladas, salads and refried beans. Slice thick and sautee until golden brown and serve with salsa!

Quesadilla--The traditional melting cheese of Mexico; Quesadilla is ideal for enchiladas, burritos, chiles rellenos, nachos, and of course, quesadillas. Delicious melted with Chorizo for a Mexican pizza!

Monterey jack cheese, Asadero cheese, Chihuahua cheese or Queso Blanco . Queso blanco and Monteray can both be found in the dairy section at almost any larger grocery chain. If you have never tried it, ( the queso Blanco) please do so! It's an awesome melting cheese that many people are unfamilar with. It's flavor is also very yummy and it's authentic mexican cheese.
