I sometimes like to have a small bowl of cold cereal.
If your blood sugars run high during the night, your snack is too much. However, there shouldn't be any problems with your snack if your blood sugar is on the lower side when you eat your snack and your blood sugars are say between 120 and 150 during the night.
I can see why your nurse tells you it's too much. This is most likely because, both the apple and the peanut butter are both high in carbohydrates and could cause your blood sugar to fluxuate a lot during the night which is not good for your health.
Your health could very well suffer over a period of time if you are consistantly having high average blood sugars (i.e. 180 or higher) throughout the night. Perhaps you could have a HALF of an apple, or a small apple, and ONE tablespoon of peanut butter insead.
I would suggest setting your alarm in the middle of the night (like 2 hours after your bedtime stack) and taking a random blood sugar check a couple of times a week to see how you are doing. And then on the same days, check your blood sugar when you get up. If your blood sugars are good (i.e. under 180 at night, and under 140 in the morning) both times on a consistant basis, then use that to negotiate with your nurse about your bedtime stack. :-)
An alternative bedtime stack could be a healthy tuna or regular salad (light on the reg mayo or salad dressing -no "lite" stuff), or some steamed vegetables and chicken breast or tofu.

A hardboiled egg for the protein, a handful of nuts usually almond or peanuts, and a bit of carb - some corn chips or a cookie, if I have been good, some apple if I have not.

i don't have diabetes, but i really like these sugar free cookies that i get from my local 99 cent store. you can eat them because the person who made them has diabetes. they come in chocolate chip, oatmeal, coconut (my favorite) and almond. i don't know the name of the company though... so sorry.
