ie" what parts are edible and nutritous, what parts should be discarded. example celery can /should you eat the leaves and all? how much if any should you cut off the bottom? Generally are stems nutritous on brocolli? Kale? How to tell when something is too old that it is no longer nutritous.etc. I'm looking for a book that will give me this info.
