Firstly, it's offensive for people to answer a question like this with an attack on a person's chosen lifestyle. Because a person chooses to not eat meat doesn't mean they need to be reprimanded for it. Kind of the point of free will- we can do what we want with our own bodies.
Secondly, try going to an organic food store. In NC and SC, we have Earthfare, which is AWESOME. If you're into the low-maintenance foods (i.e. freezer section) try Morninstar Farms, or some of the lesser known brands. There are SO many varieties of non meat or fake meats. I prefer to cook with "Good Ground." Once incorporated into a meal, it looks and tastes JUST like ground beef. Even my carnivorous roomie likes my vegetarian chili made with this.
Try to mix things up with your meals. DON'T overdo it with pasta. No matter how much you might like pasta, you WILL get sick of it if you eat it every night for a month. I enjoy Mexican food, so I tend to make quesadillas, burritos and chimichangas. I also fix simple dishes like sauteed veggies and rice. A good place to start is on foodtv.com. They have so many recipes for vegetarians, from breakfast, to lunch, to dinner, and even desserts(I know, who eats meat for dessert?) There's one wrap they show that has egg salad in it. VERY filling and very yum.
Also check out the cookbooks at the library.

Yup, meat.
You are NOT a vegetarian, you are an omnivore. That not only means that you CAN eat a variety of foods, it means that you MUST eat a variety of foods to stay healthy.
And vegetarianism is an unhealthy lifestyle for human beings.
It's true that most people eat too much meat, but we must eat some.
Look at your teeth for example, see the sharp pointy ones near your front teeth? Those are called Canines. They are there for cutting through meat.
Have a small steak and a salad, you'll feel MUCH better for it.

Do not listen to the people that say fish. Vegetarians do not eat fish. If a person calls himself a vegetarian and eats fish, he isn't one!
Vegetarians eat grains like pasta, rice, breads and cereal. Vegetables and fruits, beans (legumes), soy products, some eat eggs and dairy (milk, cheese, yogurt). They prepare foods the same way meat eaters do except without meat or meat substitutes.

Lots of Mediterranean or Middle Eastern dishes are good. I used to be a vegetarian, and although I'm a carnivore again, most of the meals I cook at home are still meat-free. If you're thinking of going veg, just be sure to incorporate good sources of protein!
I like to look for recipes here: http://vegetarian.allrecipes.com/

Vegetarians, plain like that, don't eat meat including fish, not even shrimp.
You can eat anything else, though! Pasta with hundreds of kinds of veggie stirs and sauces, risottos, pancakes made of potatoes, sweet corn, zucchini, cauliflower, beans.. made of anything. You can use eggs and cheese, can bake cakes.. And the things that can be done with tofu..
Almost any meal can have a vegetarian alternative. Get a vegetarian cookbook, there are tons of them out there.
And this is just one store..
