BLOOD ORANGE SORBET
1 cup water
1/2 cup sugar
2 cups blood orange juice

In a saucepan over medium-high heat, bring water and sugar to a simmer and simmer for 2 minutes to dissolve the sugar. Remove from the heat and cool. Stir in the juice and taste for sweetness. Make the sorbetto according to the manufacturer's instructions for your ice cream maker. Or pour the mixture into a shallow dish and place it into the freezer for 1 hour. Break up the ice particles with a fork every hour until a smooth, frozen consistency is achieved.

Definitely something light. How about some fresh organic strawberries and blueberries, served with a light gran marnier honey ginger sauce. Or just a simple scoop of fruit-flavored gelato with a little fresh fruit would work too. So what time are you sending dinner over? We're hungry!

Tiramisu is AWESOME...but not that light.

I like jello cake...make a white cake and let it cool. Then poke lots and lots of holes all over it with a fork. Then mix up your favorite jello (I use strawberry or strawberry-banana) but use 1/4 cup less water than the box directions. Pour the liquid jello all over the cake evenly. Top with Cool Whip and let set in refrigerator for a few hours. Serve cold...very refreshing. YUM

Tiramisu. it is perfect for an italian meal. There are many different types of recipes, and you can make it so that it's not so heavy at the end of dinner. It is also sold in many places, so you don't even have to bake if you don't want to.

You'd think that after a dinner with a lot of garlic and so filling, you'd want something light that would also take away that heavy taste. I would serve a light sherbet with fruit. Perhaps chocolate wafers with that as well. They are light and airy...almost no calories.

Lemon meringue pie is a nice, light dessert, and will finish off the evening with a flare. And oh, so easy to make.

I'd say something light like a Raspberry or lemon Sorbet or for a more italian flair how about some Spumoni?

Something light and refreshing though quite easy to make would be fresh fruit with whiped cream or vanalli yogurt. I find it goes good after pasta or any meal with tomatoe suace.

Strawberries are my favorite kind to dip.

Sliced strawberries plus a little sugar if they are not ripe enough and chilled in strawberry liqueur topped with a dollop of whipped cream....and toasted almonds
