Look for the bset by date. They do go rancid after some time. So buy just what you need. Asian food stores or supermarkets should carry them. And only Nori seaweed for sushi.

As they are dried I would think they would last acouple of years or more if they are in their original sealed package.

Pretty much forever. You would use them before they go bad.
