I'm willing to try any kind of tofu (silken to firm), so any recipe/cooking suggestions are welcome.

I take firm tofu and slice it very thin into rectangular pieces. Then I marinade it in soy sauce with ginger and garlic for about 2 hours. Lay the marinaded pieces on a baking sheet and bake at 350 for about 20 minutes or so until brown and slightly crunchy. This is how I like my tofu. Good luck

The beauty of tofu is that it acts like a sponge so you can give it whatever plavor you want. You can use silken tofu in fruit smoothies and some deserts (make faux pudding) and to make quiches. I like firm tofu cause it's easier to work with. When you open it make sure you drain it well. I place the block between paper towels and place a plate on top to make sure all the excess liquid is drained.

My fave way to make it is in a stir-fry. Cut tofu up into stips. Fry up in sesame oil, toss in your fave veggies and some soy sauce... voila!

Cut some green and red peppers into 1-inch squares, stir fry it and then add the 1-inch diced very firm tofu. Stir-fry some more to get some color on the tofu and then throw in some chicken broth for flavor. You only need enough broth to moisten the peppers and tofu. You can also use a nice rich vegetable broth if you're a vegan.

Nice and simple and very tasty.

silken tofu can be used as a substitute for yogurt in a smoothie. just mix some with frozen strawberries and blueberries. add some honey or sugar as a sweetener. it's a great way to get your fruit and your protein at once, and tastes delicious.

also, try pre-packaged tofu mixers from your local grocery or health-food store. for example, there's a seasoning packet that makes scrambled tofu taste like scrambled eggs! (and look like them too.) you won't believe it until you try it. if you want to completely get rid of the tofu taste, try those!

I fry cubes of tofu in olive oil with onions, mushrooms and soy sauce. Also, if you want to add a bit more flavour, you can add green and or red peppers or snow peas. I cook it a very short time...maybe 5-7 minutes and then put it over brown rice I've boiled in another pan. The tofu absorbs all the flavours and it is really yummy.

There are many ways to cook tofu. One of them is to steam it. After steaming, just springkle on top with shredded red and green hot peppers, fried garlic n onions, and a teaspoon of black soy sauce. It tastes heavenly, just try it. Another way is cut every piece of tofu diagonally in two, fry it until golden brown. After the tofu is cooled down, slit every piece at the diagonal and stuff it with shredded cucumber or boiled bean sprouts. Get ready a mixture of tomatoe and chilli sauce or speghetti sauce, dish the sauce over the stuffed tofu. And there you are, a delicious and healthy dish of palatable stuffed tofu is ready to be eaten. This is actually a famous Malay dish in Malaysia, but our sauce is added another important ingredient, i.e. grinded fried groundnuts, it surely taste heavenly!. Happy trying!

One can freeze tofu to make it seem a bit denser when cooking, providing you want that for a particular dish. Just squeeze out the liquid, cube or slice it and freeze. I like this method for stir fry :)

When any of my friends tell me that they don't like tofu, I Always make "Colonel's Tofu" and invariably, they are converted. It takes quite a bit like fried chicken, as I remember it.

3/4 c nutritional yeast flakes
1/4 c breadcrumbs
1 tsp dried parsley flakes (or 1 tblsp chopped fresh)
3/4 salt
1/2 black pepper
2 eggs
2 tblsp milk (soy or dairy, you choose)
1/4 c peanut or canola oil
16 oz extra firm tofu, cut into 1 1/2 x 1/3 inch slices

optional: 1 tsp cayenne pepper ;) I like it a bit spicy

Prepare the breading by combining yeast, breadcrumbs, parsley, (cayenne?) salt, and pepper in shallow bowl. Set aside. In a small bowl, lightly beat eggs, and stir in milk. Heat about 1 tbps oil in a large non-stick skillet over med heat.
While the oil heats, start breading your tofu. Double bread each slice: start by coating the tofu in breading-only a little bit will stick. Then transfer the slices to the egg wash and coat thoroughly. Return to the breading, and toss the breading over top to coat. Place as many slices in skillet as will fit comfortably. Fry 3-4 min on each side or until light brown and crispy. When cooked on both sides, transfer to paper towels to drain, then place on a cookie sheet in a 250F over to keep warm. Continue with the remainder of the tofu, adding more oil if needed.

This isnt the healthiest recipe, but its a great introduction to the versatility of tofu. I make this for new converts. My favorite use for tofu is, by far, stir fry. Marinate the tofu in soy sauce and garlic for 1-2 hours first, and then add to the veggies of your choice. Yum. :)

I generally just cut up cold tofu and serve it under warm vegetables and sauce. I don't like my tofu fried or cooked because it tastes too much like a sponge to me. I will normally use Green Giant's szechuan vegetables or teriyaki vegetables in this case.

Other than that, I will cut up tofu and mix it in with noodles, sesame seeds, and vegetables. I usually use Annie Chun or Simply Asia noodles when I do this. They have a lot of different varities- chili, soy ginger, szechuan, sesame, etc.
