isopropyl acetate. I had to synthesize it once in a lab class, and all I could smell was overwhelming banana smell for 5 hours. It was awful. I couldn't eat bananas for years. THe amazing thing is that it smelled EXACTLY like banana, even the creamy-ness. Which I thought would be unrelated.
I didn't taste it of course, because lab glass is dirty and I wouldn't trust anything that comes out of it. But since it's what gives bananas their flavor I'm going to have to stick by my answer.

The taste varys depending on the way you treat it before you taste it. Did you let it sit for awhile? Or did you hold it and warm it up in your hand letting it get kinda wet and ripe in places?
