Biscotti is made by mixing a dough and shaping it into an oblong blob about 2 inches high-then baking it. Once it is baked, it is sliced into 3/4 inch slices and re-baked, making it very hard. The original shape is similar to a flat loaf of bread or an egg cut in half, up-side-down. When it is cut and re-baked, it is flat (where the bottom touched the pan) and flat along the slice with a curved top. Similar to a boat turned up-side down.

Biscotti is Italian for "cookies" so technically they come in any and every shape that normal cookies do. If you're thinking of the type of biscuits that you get at Starbucks to dip in your coffee, they are normally long and narrow rectangles with rounded corners.

it's kind of shaped like a finger. I've thought of biscotti as sort of being like a Vienna Finger cookie, without the filling. And more grown-up.
