chop up some garlic, onion, green pepper, and sautee them in olive oil. Add some spicy (or mild if you prefer) sausage and once it's a little brown add 1 cup of rice ( or what you prefer). Then add a packet of Sazon Goya seasoning( doesn't matter if it has achote or not, i like with achote). then add 2 cups boiling hot water. salt to taste. once the contents in the pot start boiling cover and put it on low until rice is down. Delicious

start out by putting 3 fresh tomatoes in a blender then add a clove of garlic, a small onion chopped up, and a chicken bullion cube. Blend if it becomes to thick add a very little bit of water. Blend until smooth and set aside. Heat about 2tbsp of cooking oil in a large frying pan add 1-11/2 c. uncooked white rice and stir frequently until rice is a light brown color immediatly add the blended mix to the frying pan and saute until a nice red color about 2 minutes lower heat and fill the blender pitcher 1/2 way with water pour that into the frying pan and simmer at a medium low heat for about 30 minutes or until there is no more water in the pan. Then enjoy.

I'm usually a cook from scratch person, and I must say that the recipes I see in the answers here look yummy, but for quick and dirty, the Rice-a-Roni Spanish rice is pretty decent--you do need a small (14 oz) can of diced tomatoes.

2 to 1 on water to rice
1 can diced tomatoes
chopped onion to taste
1 tbl sp cumin
1 tbl sp garlic powder
1 1/2 cubes of chicken tomato flavor bouillon usually found a ethnic isle at the store
hand ful chopped cilantro
in a pan put 1 tbls oil and and lightly brown the white rice.next add water, tomatoes, onions and all the spices except for the cilantro. bring to a boil and stir to make sure the bouillon melts. next turn down heat to medium and put a lid on the pan.leave it alone don't stir it. when the water is almost all gone fluff the rice with a fork and turn off heat and cover the remaining water well cook out by the heat left in the pan. then add the cilantro when you about to serve

Are you looking for Spanish rice recipes from Spain or just Spanish from who knows???
Because none of those are from Spain.

My grandmother was from Spain and she taught me to cook rice with garlic, chopped onions and use saffron in the hot water. It's simple and good.

i think i make a killer spanish rice.brown it real good in a little bit of cooking oil.if its not browned good u get soggy rice.everything is to tast.when its browned good add your water.3x amount of rice.1 cube of tomato broth,1 can stewed tomatoes,1can tomatoe sauce,half an onion in the middle of the skillet or pot,half a can of sweet peas,cumino,minced garlic, salt,pepper.this is comin straight from san antonio.
