rather then soaking them in lemon juice like the others have suggested. take a cheap squirt bottle (from the dollar store) and fill it with about 4 parts water and 1 part lemon juice... with the mixture at room temprature you put your fruit on a paper towel or kitchen towel and spray the mixture over the surface of the fruit. That way they are getting the acid they need to keep from turning brown and the lemon is so light that it will not alter the taste of the fruit. You don't want to "soak" bananas in liquid because they will absorb liquid. Once lightly coated, plate them for the table and cover with plastic till ready to serve.

you soak them in lemon juice and water. The lemon juice stops the banana from turning brown, and apples, too. There is this stuff called fruit fresh that has a higher content of citric acid and it gives you the right amount to use.

Ever heard of the product "Fruit Fresh"? It is sold in stores in the areas where 'canning' supplies are located. It is often used in the canning process to prevent discoloration of fruits. When I can peach preserves, I put some Fruit Fresh in a gallon container filled half-way with water. Then, as I peel the fruit, I put it into the water until I am ready to continue to the next step (slicing).

It contains ascorbic acid such as that found in lemon or other citric juices. It [fruit fresh] is less expensive for me to use than to purchase enough lemons to treat a bushel of peaches. Drug Stores often carry ascorbic acid that may be mixed in water for a anti-discoloration agent, too.

Good luck with your display..

Go with the lemon/lime juice - things like Fruit Fresh contain MSG, and can be a severe migrane trigger in allot of people. That way you don't have to worry about making someone ill.
