I was wondering this because all i eat is morning star and its pretty expensive to be eating 2 to 3 times a day. And my brother is a vegetarian too. So...... We eat a lot of morning star.

Wow. Those recipes sound good. Too bad my printer isnt workin. I guess ill just come over to he computerand look at the recipes.

you will need:
8 oz. of pre-sliced mushrooms
1 tablesppon ketchup
1 tablespoon soy sauce
1 med onion, diced
1small potato, shredded
thyme (to taste)
1 garlic clove, chopped
and 1 large carrot, shredded
and 2 pkgs of crescent rolls

saute the onion, potato and carrot in your choice of oil (I like about a tblspn of olive oil) for until soft. Add the mushrooms, thyme (about a teaspoon for me), garlic, ketchup and soy sauce, mix and cook for 5 minutes. open up the crescent rolls, and put the mushroom mixture in the center of the crescent roll, mush the edges together, and cook at whatever temp the pkg says until golden brown. YUMMY! Very simple, I have not ruined it yet.

This will take about 30 minutes in all, and I think it tastes pretty good (also isn't that expensive).
What you need:

Some onions
Rice
Some veggie broth (you can use cubes in water or something) (about 3-4 times as much as the rice)
Spinach (I use some frozen spinach)
Cream cheese
Mushrooms
butter/margarine/oil

First start the veggie broth boiling. Saute the mushrooms and onions. While you are doing this put some butter (margarine or oil) in a medium size pot (big enough to cook rice in). And brown the rice. After maybe a minute (you don't want very much colour on the rice) add a ladle of veggie broth to the rice, it will steam and boil, but it's ok. Stir and wait for the broth to be cooked it. Repeat adding broth until all the broth is done. About this time the rice should be done. Add the onions and mushrooms to the rice. Stir in and then add the spinach and cream cheese. Done.

I am very vague about things because cooking should be somewhat of an adventure, so I want to leave a lot up to you. You can add other stuff (maybe garlic) if you want, and not use other stuff if you don't want it.

Here are some approximations on what I use:
200ml of rice
800ml of broth
50g of spinach
50g of cream cheese
couple onions
hand full of mushrooms

again, play around and have fun.

Tom's Super Easy Bean Salad. no cooking, prep time 10 minutes.

1 can of 3bean mix (will feed 2-3)
1-2 tablespoons of olive oil
add vinegar to taste, white or balsamic. white suits the dish better.
salt and pepper (lots, to taste)
half an onion cut into rings
small cos lettuse ripped into bite size chunks
three sticks of celery diced.
(Add whatever else u like, carrot, radish, raisins, cooked spinach)

Rinse the beans well before mixing ingredients to remove the fart slime. Add together. Enjoy with garlic bread or perhaps some pasta or pasta-salad to get complete protein. REALLY CHEAP, REALLY QUICK, and healthy. Serve cold. Perfect for a lazy sunny summer afternoon.

Leftovers keep well for up to a week for a quick protein hit.

Oooh that is expensive. The keys to inexpensive vegetarian cooking are rice, pasta, frozen veggies and BEANS. I like to make bean burritos: just use tortillas, canned fat free or vegetarian refried beans, cheese (if you eat it), lettuce, tomatoes and salsa. A lot of canned soups, boxed rice mixes, etc. are vegetarian... you just have to look at the ingredients list. Throw some canned beans in everything to add protein. Goveg.com has some easy recipies if you look under the "daily menu" section, but I recommend investing in a vegetarian cookbook so you don't have to print something out everytime you want to cook. Stir fry isn't that hard. Buy some organic rice, cook that by instructions. A variety of frozen vegetables, a stir fry sauce (in mostly organic stores, they have a variety to choose from, like ginger flavor, sweet n sour, or you can just use soy sauce), cans of black beans, and extra firm tofu (if you guys like it). Add all the ingrediants, but vary the beans and tofu, like, use beans one day and tofu the next, for protein. I think that works fine for a quick healthy meal. Not that expensive either.

eating all morning star is still eating processed food- which is kinda counteractive to having a healthy lifestyle. I try to keep my fridge stocked with grains, veg, and fruits, etc. Get some good cookbooks, and Veg. Times mag. The recipes are not that hard. Try one at a time, and make a "date" of it with your bro to get him motivated too!

spinach mushroom quesadilla
soft tortilla
spinach dip
raw spinach
roma tomato sliced
grilled portabella mushrooms

throw the ingredients inside the tort and grill or cook in frying pan on stove until tort is a little crispy. garnish w/sour cream and salsa.

spinach dip is pack of frozen spinach drained
package of cream cheese
cup of mayo
2 cups shredded parm cheese
mix together and cook in the oven @350 for30 min

Baked Corn

This is my favorite, everybody asks for the recipe :)

INGREDIENTS:

2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.


Summer Potato Salad

INGREDIENTS:
5 cups peeled and cubed potatoes
3 eggs
1/3 cup lemon juice
1/4 cup vegetable oil
2 teaspoons white sugar
1 1/2 teaspoons seasoning salt
1 1/2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/4 teaspoon ground black pepper
1/2 cup mayonnaise
1/4 cup chopped green onions
1/3 cup chopped celery
3 tablespoons chopped fresh parsley

DIRECTIONS:
Bring a large pot of salted water to a boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl.
Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. Peel, chop, and add to potatoes.
In a small bowl, combine lemon juice, oil, sugar, seasoned salt, Worcestershire sauce, mustard powder and black pepper; mix well. Blend in mayonnaise. Pour lemon dressing over potatoes, and stir to coat.
Mix in green onions, celery, and parsley. Refrigerate for at least 2 hours before serving.

I GOT VEGETARIAN TIMES, BUT I MOSTLY LOOK AT THE PICTURES & DREAM OF MAKING SOME OF THAT STUFF. SO THE BEST THING IS TO GET CREATIVE & GO TO E-BAY. I GOT SOME SIMPLE COOKBOOKS FOR SOME GREAT PRICES, SOME LESS THAN $1.00. AND SLOW DOWN ON THE PROCESSED FOOD I GOT GIGGLE LIKE J-LO NOW. AND AM HAVE TO WORK OUT BIG TIME YOU GET MY BUTT RIGHT.
