Here is an amazing marinade for steak or chicken that cooks so well on a propane grill. dry rub both sides of the meat with Montreal Steak Seaoning and a dash of Emeril's Asian Essence. In a flat tupperware dish, place the meat in a wash over with some soy sauce. Follow with worchestershire. The liquids should be even parts. Marinate in the fridge for 30 minutes, and then flip the meat. 30 more minutes later and it's ready. You can very well marinate overnight if you want.

Marinade the food. Also they sell flavored wood chips that you soak in water juice or wine and throw on the coals to give the food a smokier flavor. They are usually on the BBQ section at the store.
