Not the literal translation, but my experience in Mexican restaurants is that carne guisada comes in a gravy, and carne asada comes with no gravy. Since gravies usually have flour to thicken, I prefer the asada. The meat seems to be the same kind of meat. So I guess the guisada is cooked in a liquid gravy, and the asada is cooked on the grill.

Carne Guisada is cubed Stew meat, prepared with sofrito, ajo, big vegetables pieces like carrots, potatoes, celery, red wine (or beer) made in a caserole on a tomato base... usually served over white rice... Very common in Puerto Rico.

Carne Asada is more like sealed meat over a grill or roasted. Is mostly prepared on a BBQ, grill or roast pan.
