Red checked table clothes might be a bit over done, but they are always a popular choice for "Bandana BBQ" decor. To accompany those, you could find some old cowboy boots that are relatively clean, decorate them by tying triangularly folded bandanas around the shafts and use them as center pieces. Fill the boots with some dried wheat bunches from Hobby Lobby or another craft store. Buy several lassos and lay them around each boot to complete your centerpiece. It will be easy to find disposables that match the red and white pattern of the disposable table cloths.
Another idea is decorate using a Dallas Cowboys theme, in blue and white, with stars. You could have the waiter staff or guests of honor/s, dress as the football players and cheerleaders. This idea would work using any famous Texas sports team. You could hire a Bush impersonator for comic entertainment?

If you're looking for a theme'd BBQ, then just make sure you've got lots of red, white and blue, and quite a few lone stars out there on display. The lone star is very important. A number of garden centers, or even places like Wal Mart, have begun carrying a wrought iron-looking encircled lone star, thats sort of rusty colored. You see this sort of decor in family type restaurants that are going for a Texas theme.
The biggest BBQ in Houston though is during the rodeo, and thats just a bunch of tents near the astrodome with meatsmokers and beer everywhere.

I threw a "hoe-down" a few years back. I bought cowboy boots from a thrift store and put small flower vases with flowers and small flags in them for the tables. I used horse shoes (painted red-white and blue)(you can get them at any farm and ranch store) to hold the tableware and napkins.I tried to keep everything in the theme of red white and blue for the foods or food containers. For example strawberries dipped in white chocolate on a blue plate, a watermelon cut like a basket filled with blue berries, watermelon and honeydew. I had lots and lots of country music...Good old stuff like hank Williams, johnny cash etc. Everyone dressed up in western attire, what fun we had! People are still talking about it!
