7.5kg of boneless veal 2.5kg red onions 1kg of butter 5kg of fresh tomatoes 2.5kg of mushrooms Salt, pepper, parsley Grease proof paper ( for packing of chevap's)
Boneless meat cut into small square pieces, put salt on it, and quickly fry it on butter. Blanche tomatoes. Once they are blanched, peal the skin of, clean them from any left over seeds, and cut them into small square pieces. Clean the red onions, and chop them into small pieces. Wash mushrooms, and slice them. Fry red onions on the butter, until they become golden brown. Add mushrooms, and continue to simmer it. Than, add tomatoes, and gently fry all together. In the end add meat, and salt and pepper. Stir it gently; let it cook on the gentle heat, until it gets a desired flavour. Place greasy paper into the tray, and put prepared chevaps inside. Cover it; place it into preheated oven, and let it bake, until it becomes crunchy. Once you covered chevaps in grease proof paper, spread yolk over the ends of the paper, and stick them together. Serve it warm in grease proof paper.

Here is a recipe from The Frugal Gourmet "On our Immigrant ancestors" cook book. I have made them many times and tast very authentic.
1 lb ground lamb 3 tbs hot Hungarian paprika or sweet if
1 lb ground veal you don't want it hot
1 lb ground pork
1 large yellow onion peeled
2 tbs freshly gound black pepper
grated (use a food processor) Salt to taste
3 cloves fesh garlic, peeled and pinch of freshly grated nutmeg
crushed
Olive oil for basting
Mix all the ingredients, except the oil, thoroughly and roll the mixture into little "cigars" about 1 by 3 inched. Rub lightly with olive oil and grill or broil until done. Serve with yogurt sauce.
1 pint plain yogurt juice of one lemon
1/2 cucumber, peeled, grated and drained one hour
2 cloves fresh garlic, peeled and crushed
Salt and white pepper to tast.
Mix all ingredient together and enjoy!!!!
