I need a good, easy meal that's healthy... but I don't eat meat (bleck! gross....) that includes poultry and fish. I also don't eat tomatoes or onions. Help me please! Thanks !

These things aren't a "diet", I just don't like them. I'll eat tomatoes, like in ketchup and sauce, but I just don't like them raw and in their veggie form.

Is the tomato/onion thing an allergy or a preference? That is really restrictive, especially for someone on a vegetarian diet.

I make a good lentil soup that is full of protein and nutrients! There is no set recipe, but I usually do something like this:

- Sautee garlic in a bit of olive oil in a large pot
- Add a peeled, thinly-sliced carrot and sautee until the carrot is soft
- Add vegetable stock
- Add a can of brown lentils and fresh herbs (try rosemary and sage)
- Simmer for thirty minutes
- Stir in some fresh spinach leaves and a little lemon juice and simmer for about five minutes, until spinach wilts
- Serve topped with feta cheese, with slices of a fresh baguette

Also, I like to serve whole-grain or soy-based pasta with a spicy broccoli sauce. First, I rinse some broccoli and chop it into small pieces. Then, I boil it in the same water I will cook the pasta in. Once the broccoli is really soft, I take it out using a slotted spoon and put the pasta into the broccoli water. While the pasta is boiling, I sautee some garlic and red chili flakes in olive oil. After two or three minutes I add the cooked broccoli and sautee them together. Then, I take a fork and mash the broccoli and garlic mixture into a paste. When the pasta is cooked I strain it and toss it into the pan with the broccoli mixture to coat. Serve with parmesan or grana padana cheese on top.

Get some red curry paste. Use about a 1/4 teaspoon in a spoonful of cold olive or other vegetable oil; mash it up in a saute pan until it is mixed. Add some more oil. Dice potatoes, add chopped sweet red pepper, a small amount of chopped shitake mushrooms, maybe a few peas. Usually I'd add onions; but you don't have to. Pre-cook the diced potatoes in a bowl in a microwave to save time. Then finish all the ingredients in the pan at medium-high heat. Cook until crisp or light brown on the edges. Salt to taste.

a Meatless Meatloaf

Ingredients:
1 pound Morningstar Farms ground meatless, thawed
1/2 medium onion, chopped fine
1 1/2 cups bread crumbs, seasoned
3/4 cup scrambled egg product, thawed
1/4 cup egg substitute
2 teaspoons garlic powder
2 teaspoons seasoned salt
1 teaspoon pepper
1 teaspoon Italian seasoning
1 envelope Lipton onion soup

Directions:
In a large mixing bowl combine grated onion, bread crumbs, scramblers, seasonings and soup mix. Blend well.

Add ground meatless and blend well.

Form into a loaf, place in a sprayed loaf pan.

Bake at 350 degrees for 45 minutes.

Nutritional analysis per 1/8 loaf:
Calories: 22
Fat: 0.9
Cholesterol: 1
Protein: 21.3
Potassium: 274
Calcium: 38

Stuffed shells!!! One of my favorites! These amounts are approximate, I just sort of throw it together...

Filling:
1 tub ricotta cheese (16 oz?)
1 lb. shredded mozzarella cheese (whole milk mozz is the best), divided
sm. package thawed frozen spinach
1 T. butter
2 eggs (not absolutely mandatory if you don't eat them, but it helps the filling stick together a little better. Use a half stick butter if you don't use eggs)
1 clove garlic
Italian seasoning, salt and pepper, to taste

large pasta shells cooked and drained
Alfredo sauce to taste

Mix all filling ingredients together, stuff precooked shells, place in casserole pan (I use a 9x13 with 2 inch sides for this one). Top with remaining mozzarella cheese. Bake at 350 for 40 minutes, broil for last couple minutes. After baking top with alfredo sauce (I use the jar stuff and toss in mushrooms and some extra seasonings, but that's just me).

My favorite is pasta in a black bean pesto sauce. No meat plenty of protien and really delicious. You can actually buy the pesto sauce at your local store along with canned black beans. Boil your water, make your pasta ( Like Bow tie pasta for this dish). Blend your pesto and Black Beans in a dish/pan and heat in a Micorwave or on the oven. When pasta is finished drain and the pesto and black beans and enjoy.

Soak a cup of black eye beans in water for 4 to 5 hrs. Grind them to a paste in mixer/ grinder.Add half teaspoons of salt. Spread the paste ( around half cup) on heated non sticking pan ( just like you cook Dosa in Indian cookery) for around 3 minutes.
Eat it with chilli tomato ketchup.

Wow that's a hard one! Cheese enchiladas some people make them with a tomato sauce but there are brown gravy like sauces for them, Nachos, mac and cheese. Try some soups like pumpkin and strawberry.

Try stir-frying the vegetables, and then add a cream sauce (e.g. cream, tomatoes, water, salt, and pepper, or pre-made pasta sauce). While you're doing that, cook pasta until it's soft. Then mix everything together in a big bowl and sprinkle it with feta cheese.

whole grain pastas are a really good source of fiber and complex carbs. Whole grain spaghetti with no sauce or sauce without meat is fairly healthy, but with the whole tomatoes thing, I guess that wouldn't work.

How about a zucchini pasta dish? I made it once with some home-grown zucchini and it was quite good. Just get one of those packages of sauce mixes from the store, whatever flavor you like, some fresh zuccini, whipping cream and some pasta.

I liked it very much...
