It's 3 weeks away, and about 10 people with possibly four extra 20 somethings coming. got a budget of about £80 - excluding the coals etc. Never done anything like this before. All advice appreciated. It may lead to dangerous times - like more bbq's!!!!!!!!!!!!!!!!! THANK YOU LOADS

Modified recipe to feed 10

CHICKEN SPINACH SALAD
5 bunch fresh spinach washed and dried, or cheat and get 10 pkg of the prewashed ones at the market
5 chicken- boneless breast, grilled or boiled, then diced and chilled.
3 cup dried cranberries
3 cup chopped pecans or walnuts or both.
1 cup sunflower seeds, or put on side
2 cup feta cheese
any viniagrette dressing

Mix ingredients together and add dressing right before serving. Best serve chilled. Goes great with a glass of iced tea!


MEXICAN CABBAGE SALAD
3 cabbage, finely sliced
3 avocado, ripe, peeled and diced
4 bunch cilantro/coriander, finely diced
3 large tomato diced
1 c diced celery
1 c brown onion, diced
2 fresh jalapenos, seeds removed then diced
Mayo
salt/pepper to taste

Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 cup of mayo or just enough to moisten to your taste. Mix well.

Chill for 1 hour and serve cold

Serve the above with bread and beverage.

COLE SLAW

Ingredients:
1 head of cabbage, shredded
1 carrot, shredded
1/2 medium onion, finely diced
1 Tbsp vegetable oil
2 Tbsp white vinegar
Mayonnaise
Salt
Pepper
Directions
Mix the cabbage, carrot and onion together.

Add in the vegetable oil and vinegar then add mayonnaise and pepper to taste. Mix thoroughly.

Serve

ALMOND CHEESE SPREAD

Ingredients:
1/2 cup almonds, with skins
8 oz cream cheese, softened
1/2 cup mayonnaise
5 slices bacon
1 Tbsp green onion, chopped
1 Tbsp celery, chopped
1 Tbsp green pepper, chopped
Directions
Place almonds on cookie sheet and bake at 350 degrees. for a few minutes until browned. Watch carefully. Fry bacon until crisp; crumble. Beat cream cheese, then gradually stir in mayonnaise. Add bacon, vegetables and seasonings. Mix well, cover and chill overnight. When chilled, cover top surface with almonds. Serve with an assortment of crackers.


MOJITOS
Mojitos are our absolute favorite drink, and we have perfected this recipe! :-) We learned the recipe from a bar in Couzemel, Mexico.

You need:

Rum (but pineapple rum taste better)
Fresh limes
Lime juice
Mint leaves
Sugar
Crushed Ice
Club Soda

In a glass, add the ice, the sugar, and the mint.
Using the back of a tablespoon, crush the mint into the sugar and ice.
Pour your rum into the mixture.
Add the lime juice and the lime slices.
Stir again.
Top it off with a splash of Club Soda.

Enjoy!

Make some of your own kebabs,
Easy! You will need- Kebab sticks (if wooden soak for a bit before use, you can buy them in most supermarkets at the moment)
then just push on some large chunks of onion, pepper, aubergine, courgette , chicken and bacon ( or variations of veg and different meats.)
You could buy a marinade to coat the above with or mix up some runny honey, wholegrain mustard and a bit of olive oil and brush over the kebabs. Don't worry about measurements, just go with it, they taste superb and are the easiest thing to cook on a bbq, guaranteed no undercooked meat as the chunks are quickly cooked.

Try drunken chicken! It's easy, and all you need is a beer and a whole chicken! Open the can of beer, and put it in the business end of a raw chicken (not frozen!). Now wrap the whole thing in tin foil and put it on the grill! Takes about an hour to cook, but the flavor is out of this world. Try grilling corn on the cob for a good side to go with it. In hot weather, I get sick of all the sugary creamy coleslaw you get stuck with at most cookouts. Here is my solution...Healthy and tasty!

Half head shredded red cabbage
1 medium can undrained crushed pineapple
1/2 cup toasted pecan pieces
1 bunch white seedless grapes cut in half
1 cup dried cranberries.

Toss all of it along with 1/4 cup of Extra Virgin Olive Oil and a few sprinkles salt. Can't go wrong!!

Also, I LOVE deviled eggs for any type of bbq. There are million variations on the recipe. My favorite is to mash the yokes with some Miracle Whip and diced sweet gerkin (sp?) pickles.

Caramelised Fruit Kebabs

- Chop up friut and put on skewer (apple, banana, pear, strawberry, pineapple, mango to name a few).
- Sprinke demerara sugar and mixed spice on to the kebabs and leave to marinate for a few hours in the fridge.(Mixed spice is optional)
- Place on the BBQ and let the sugar caramalise.
- When the fruit is golden brown remove from the BBQ.

Hamburgers, taco salad (corn chips, seasoned ground beef, tomatos, onion, shredded cheese, taco sauce), potato salad, bbq chicken (make sure you marinate it overnight in the fridge...some worchestershire sauce, vinegar, water salt and pepper should do, maybe some pressed garlic too, and a bit of lemon juice). bbq pork chops are always good - put some dijon mustard on them before grilling. fruit salad, lots of beer, chips and dip. i also like grilled portabello caps - drizzle with soy sauce and brush with olive oil and grill on each side for 5 minutes. very tasty for the vegetarians in the bunch.

You have to have corn on the cob, soak the whole corn in water for a day and then roast on the fire. Hamburgers and hot dogs are overdone, add something like sausage and ribs too. Potato salad is common (and tasty) too. And lots and lots of fun! Enjoy and happy birthday

buying in bulk is always better and can be easy too!
buy a whole pork roast and make BBQed pulled pork. Also you can make killer burritos or tacos with pulled pork. personally, im a vegetarian, but your not....
chicken wings!!
potato salad...the usual...mac and cheese casserole
green beans and pecan casserole
broccoli and cheese
chinese stir fry - mmm actually quite easy to make
pasta salad
fruit bowl
beer bread
i'm a stupid american, so i don't know what 80 pounds comes out to, but mix and match..
dont forget, starch - greens - fruits - meats and dairy - and of course, the best for last..fats!

bbq? got to be gyros! its a greek kebab. very easy to make.
flatten out beef and lamb till its paper thin. blitz a mixture of olive oil, lemon, oregano, rosemary, chili, cumin, red onion,loads of garlic, salt and pepper.
sorry I cant be bothered thinking of proper measures, it doesnt matter anyway, just do it to taste.

take a beans can, line it with cling film, then just do a layer of beef, then lamb, puree. keep doing it till the tin is packed.
weighh down the mixture and leave it in the fridge for 12 hrs.

take the beast out cook it and chuckit in a pitta with greek salad and mint yoghurt dressing
