Actually Iguana is considered a delicacy by many.

It is a large herbivorous tropical American arboreal lizards with a spiny crest along the back; used as human food in Central and South America

Never had them sauteed. But had them double-boiled with cinese herbs many years ago. Keeps the body really warm in winter. Fried lizards.....
Had some worms and crickets, but never lizards. In Thailand, they do them real crispy and tasty.

ALLIGATOR! U gotta get it nice & tender though. Try boiling it in salt and jerk spice for 2hrs! Best eaten with Cous Cous! Lol!!!
