Here's another neat tip: to help stop peeled potatoes from browning, place in a bowl of cold water and add a few drops of lemon juice or vinegar. You can also sprinkle them with lemon or apple juice.

The above answer might be correct, I dont know, but if you want to prevent that from happening, put your peeled potatoes in a bowl of water untill you are ready to cook them.

Like apples and avocadoes, potatoes oxidize. A little oxidation is not harmful. If you need to peel potatoes and set them aside, and the color change bothers you, you can put it in water as others said.

Because they contain iodine. It is the iodine that gets black.
