There are tons. Africa being the big continent it is, there are lots of traditional foods.
There are some things common to certain areas though. One popular food in West Africa is Jolof rice, it's a paella like mixture (but tastier! and the rice is cooked) of rice, tomato sauce, vegetables, meat and/or fish, basically whatever you want, but the constant seems to be rice and tomato so Jolof rice is generally reddish orange. It will have different recipes in different areas.

Ground Nut Stew.

It is a mostly vegetable stew, but you include ground nuts , or peanut butter. Can be served on plantains or rice. Really good and very healthy.

Doro Wat, a chicken stew made with tons of spices and a clarified butter. Also contains eggs, served with injera bread. Smells heavenly when cooking but takes some time to make.

ground nut stew is one of my favorites, and I have recently learned that it differs from country to country. my favorite version is made with chicken, chicken broth, green peppers, onions, 1-2 habaneros, maggi chicken buillon, peanut butter, and tomato paste, w/ salt and pepper to taste.

I also LOVE ethiopian food, especially Yewaze tips, which is a type of spicy fried beef, fried with onions, garlic and seasoned with special spices. I also like wat, which is like a barbecuey type of meat, and incredibly complicated to make (a friend tried to show me how and i got lost after she started throwing in her "special blends of spices" which she couldn't name or tell me where to get.)

Also in Sudan they make a lot of stews, especially a beef stew made with onions, tomato paste, maggi buillon, garlic, and potatoes or pumpkin. Cumin, salt and pepper to taste.
