Minced pork is used much more often in Chinese cooking rather than ground beef. The few dishes I can think of that use ground beef are West Lake Beef Soup, steamed riced noodles that have a ground beef and cilantro mixture inside, or steam beef meatballs using a similar beef and cilantro.

Try Ma bo tofu. The easy way is go to the Asian markets and get a packet of ma bo tofu mix. Brown the meat, add tofu and the packet contents. Garish with green onions. Its done. The instructions on the packets are in English. You can also use ground pork, chicken, or turkey.

They don't use beef in China. Cows take up too much land and are too expensive. They use more chicken, pork, fish, duck etc...or no meat.
