OOhh so many great ideas!
I make a killer stir fry. Start with a dash of sesame oil fresh garlic and ginger root in a big wok. Then add broccoli, bok choy, green onions and sweet peppers. Wait till the broccoli starts to soften up a bit before you add mushrooms, squash, cashew nuts, bamboos shoots, water chestnuts, and bean sprouts. Then serve over a nice nutty brown rice. You get great protein, plus plenty of yummy nutrients!

My best one is this, everybody loves it!
Baked Corn
INGREDIENTS:
2 cups whole kernel corn
1/4 cup chopped onion
1/4 cup green bell pepper, chopped
25 g margarine
2 tablespoons all-purpose flour
1 teaspoon salt
ground black pepper
3/4 cup milk
1 egg
1/3 cup cracker crumbs
1 tablespoon butter, melted
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large skillet, saute onion and green peppers in the margarine. Using a wooden spoon, stir flour, salt, pepper and milk into the sauteed mixture. Stir corn kernels and egg into the mixture before pouring the entire concoction into an ungreased medium-size casserole dish.
Combine cracker crumbs and melted butter in a small bowl. Pour the mixture over the casserole.
Bake in a preheated 350 degrees F (175 degrees C) oven for 30 to 35 minutes.

Spinach pie (it's made with spinach, fillo dough, feta cheese, cottage cheese) ... it's wonderful!!!
Quiche... you can make meatless quiche.
Scalloped Corn (some people call it corn casserole)
Macaroni salad (cold salad), just add lots of different vegetables.
Spaghetti salad - make it like you would regular spaghetti salad, but omit the meat. We do that, and it's great!
Sauted zucchini, yellow squash, mushrooms, green peppers (my daughter loves this meal)
There's also a cold vegetable pizza that my friend makes. The sauce is cream cheese, it's mixed with a pkg. of hidden valley dry mix. The crust is a cylinder of crescent rolls that's been pressed into a pan and baked. After that, you put the cream cheese mixture all over it and top that with any vegetable you want (broccoli, cauliflower, green peppers, mushrooms, cucumbers, sliced radishes, zucchini... etc.). Really good!

Most fresh green vegetbles can be cooked in low flame over the stove or microwaved, and seasoned with atablespoon of oil and grated coconut and green chilli. Makes agood side dish.

i know one simple reciepe fun dough. Its easy to make i will tell u
melt some chocolate and cut some fruits and then put all the fruits in melted chocolate and serve it with something that will keep the chocolate warm. if u r not going to that the chocolate will cool down and it will be as hard as the chocolate bar.

I have one! You can have some fried eggplant. All you need is eggplant, eggs, and breadcrumbs. Don't fret if your a vegan, just get egg substitute. All you do is cut up the eggplant. Then you dip them into eggs(cracked),then breadcrumbs. After that, you just put it in a frying pan.
Yum Yum!

my fiance who is vegetarian makes this:
Dice peeled taters
onions
eggplant(diced)
hot peppers(your choice)
cook in olive oil on stove-top on med. to med-high till thoroughly cooked, add a little soy sauce for flavor.....scramble some eggs(substitute eggs if vegan), and add to rest. VERY GOOD
