Make sure the spritzer is chilled prior and if you dont use it all in one round then keep it on ice. Serve before any food arrives. Keep serving throughout the meal. If you notice someone has an empty glass immediatly call them on it, and refill it. It isnt always customary to only drink Chapagne, try complimenting it with some regular white wine. You should serve it at the beginning of the meal. The acidity in the champagne will cleanse the palate and make your meal that much more enjoyable!

if they order champagne with lunch - you take it out and open it and pour it for them.

They may also want mimosas - 70% champagne
30 % orange juice
