Sulfites (a form of sulfur) are preservatives that are often added to dried fruits and other foods. Many people react to sulfites (headaches, diarrhea, etc.). The body has an enzyme for the detoxification of sulfites (they are also produced in small amounts by the body's metabolism) called sulfite oxidase. This enzyme requires a cofactor of the mineral molybdenum and a deficiency of molybdenum in the diet can lead to poor activity of the enzyme and an increased 'sensitivity' to sulfites in the diet.
