The song Yankee Doodle was invented to make fun of the Yankees during the Civil war. It was showing how stupid Yankees were by giving examples of stupid things they do, like calling feathers macaroni.

Because the French hated Americans. The French originally wrote the song. In those days, a "feather in your cap" was a military honor. They were trying to say that Americans flattered themselves over worthless accomplishments.
