I have cleaned horseradish roots and need to clean them. I am not sure how to go about this.

Horseradish doesn't keep very well after being dug, no matter what you do. My grandfather was a fanatic for it. In order to make it available year round, he would cover it with bales of straw and dig it as needed.

Even canned it doesn't keep well, and needs to be refrigerated, even if you hot water process it. It's good for a full month in the frig, at 2-3 months, the taste has deteriorated significantly.

Thoroughly clean the roots and remove the dark skin. While you can grate it, a food processor or blender is quicker and easier on the eyes. If using a blender, cut into cubes and add just enough white vinegar to process it.

Blend in 1/8 tsp canning salt per cup.
Pack into jars and add white vinegar to cover about 1/2 inch from top.
Hot process or seal tightly and store in frig.

are you making horseradish to keep and jar, etc.?? my grandparents and parents made that stuff every year. they used a hand shredder after cleaning, lots of tears, and running outside. i would suggest a food processor, cut into small pc's, and a little sugar and hit pulse a couple times.

wash-scrape the skin off-then with a fork or knife run down the root-before you know it you will have a whole pile
