Banana Soynut Bread

1/2 cup margarine or shortening
1 cup sugar
2 eggs
1 1/2 cups bananas -- mashed
3 tablespoons vanilla soymilk
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup roasted soynuts -- coarsely chopped

Preheat oven to 350F. Coat a 9 x 5-inch loaf pan with vegetable cooking spray. Mix shortening, sugar, eggs, bananas and soymilk with electric mixer. Add flour, baking soda and salt. Mix well. Stir in soynuts. Pour into pan. Bake 1 hour or more, until knife inserted in middle comes out clean

2 teaspoons olive oil
2 cloves garlic, minced
8 cups chopped fresh Swiss chard
Salt and ground black pepper
1/4 cup roasted soy nuts
Heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add Swiss chard and cook 3 to 5 minutes, until wilted. Season with salt and black pepper.
Remove from heat and garnish with soy nuts.
