I think it's because of moisture.

It isn't real cheese I dont think, I think it gets moldy if it is real cheese and its not refrigerated. I have seen that happen before.

It will only do that if it gets wet. That will cause clumping, and the moisture encourages growth of the mold that is inherent in all cheeses.
