Super EASY Shrimp Dip
"A great and easy addition to a cracker or chip. Every shrimp lover will have a cow when they taste it."
Original recipe yield: 3 cups.
Prep Time:30 MinutesReady In:1 Hour 30 MinutesServings:24

2 (8 ounce) packages cream cheese, softened
4 tablespoons ketchup
2 tablespoons prepared horseradish
1 pound cooked and peeled shrimp

In a medium bowl, mix the cream cheese, ketchup and prepared horseradish. Gently fold in the shrimp. Cover and chill in the refrigerator at least 1 hour before serving.

FAST & EASY SHRIMP STEW

1 onion, minced
1 sm. bell pepper, minced
2 lb. shrimp, peeled
Cooking oil
Cayenne pepper
1 clove garlic, minced
1 stalk celery, minced
Flour
Catsup

Make a roux with the flour and oil; brown slowly. Saute vegetables about 10 minutes. Add about 3-4 cups water. Add shrimp and about 4 big tablespoons of catsup. Cayenne pepper to taste. Cook 30-40 minutes.

Coconut Shrimp Rice

5-6 uncooked, unshelled Shrimp (not pink yet)
2 cup white rice
1 hot pepper (your choice)
1 can unsweetened coconut milk
oil

In 3 cups of water, boil the uncooked shrimp until the shrimp become pink. Reduce the water to about 2 cups. Add the diced hot pepper (jalapeno or thai chili works well), and add rice. Cook rice as you'd normally do, about halfway into cooking add the coconut milk and finish cooking rice.

Shrimp sizzlers shaw - you'll love this!

1 pound medium shrimp (about 32), shelled and, if desired, deveined
1/4 cup coarsely grated Cheddar or Monterey Jack cheese
2 tablespoons freshly grated Parmesan cheese
1/4 cup heavy cream
1 tablespoon medium-dry Sherry
2 tablespoons minced scallion
12 to 14 slices very thin homemade-type bread, crusts discarded
1/2 stick (1/4 cup) unsalted butter, melted

Into a large saucepan of boiling salted water plunge shrimp and simmer until just

cooked through, 1 to 2 minutes.

Drain shrimp in a colander and rinse under cold water.

Pat shrimp dry and chop fine.


In a bowl stir together shrimp , cheeses, cream, Sherry, and scallion.

With a rolling pin flatten each bread slice into a 3/4-inch square.

Put about 2 tablespoons shrimp mixture on each bread slice and roll up tightly.

Put rolls, seam sides down, on a baking sheet and brush all over with butter.

Chill rolls, covered loosely, at least 1hour and up to 4.


Preheat oven to 425°F.


Cut shrimp rolls in half and arrange on baking sheet, seam sides down.

Bake shrimp rolls until golden, about 12 minutes, and cool slightly.

Serve shrimp sizzlers warm.


Makes about 24 to 28

Shrimp Marinade
1/2 cup veg. oil
1cup lite soy sauce
3 tbsps. brown surgar
3 gloves crushed garlic
1 tbsp minched ginger
2 tbsps. Sherry or white wine
Marinade 1 pkg of Jumbo shrimp 2 to 3 hrs., then bake at 350 degrees for 40 mins, or grill for 20 mins., both ways is great ,but I prefer grilling wonderful taste.

Get some shrimp, put it in a bag with olive oil, parsley, garlic and salt and pepper, for only 30 minutes. Soak wooden skewers in water while it marinates, then skew them and grill, YUM!

Shrimply Delicious Shrimp Salad
INGREDIENTS:
1 pound large peeled and deveined cooked shrimp
1 cup chopped celery
1 large carrot, shredded
1/2 cup chopped onion
2 hard-cooked eggs, chopped
3/4 cup mayonnaise
salt and pepper to taste

DIRECTIONS:
In a large bowl, gently toss the shrimp, celery, carrot, onion, eggs, and mayonnaise. Season with salt and pepper. Chill until ready to serve.

2 cups chopped shrimp...1 cup chopped celery...1 cup chopped green pepper...1 cup chopped onion...1 cup ketchup...1/4 cup grated horseradish (less or more per taste).
A great appetizer--dip with sturdy crackers or veggies.
