Here's a recipe in case you get an urge:
Subgum Egg Foo Young Recipe
Ingredients
3 eggs
1/4 cup diced onions
1/2 cup diced Chinese roast pork
1/4 cup diced green pepper
1/4 cup diced fresh mushrooms
1/2 cup bean sprouts
Peanut oil for frying
Gravy Ingredients
1 cup water
1 T peanut oil
1 tsp sugar
1 tsp salt
1 tsp dark soy sauce
Dash of black pepper
1 tsp cornstarch mixed with 2 T water
Directions for Egg Foo Young
In a separate bowl, beat the eggs. In another bowl combine the remaining ingredients. Stir the eggs into the second mixture.
Preheat a wok or skillet; add about 2 1/2 inches of peanut oil. Heat until barely smoking, about 375 degrees.
Pour one-third of the egg mixture into the pan.
Brown for two minutes.
Using a ladle, splash a little bit of the oil on top of the omelette so that the top becomes firm.
Flip the omelette over; brown for about 1 1/2 minutes.
Remove and drain.
Repeat for the remaining mixture.
Top with gravy.
Gravy Directions
Bring water to a boil and add all the remaining gravy ingredients; stir for about a minute or until thickened.

Shrimp Egg Foo Young
4 tablespoons canola oil
1/4 cup yellow onion, chopped
2 cups shredded cabbage
6 eggs
1 tablespoon soy sauce
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/4 cup sliced bamboo shoots
1/2 cup cooked small salad shrimp, or large dice medium cooked shrimp
2 tablespoons green onion tops, sliced, for garnish
Place 2 tablespoons vegetable oil in a large pan and cook onions and cabbage over- medium high heat just until tender. Remove from heat, drain excess liquid, and reserve.
Whisk the eggs in a bowl and mix in soy sauce, spices, drained cabbage mixture, and bamboo shoots.
Using a non-stick pan over medium-high heat, add 2 tablespoons vegetable oil and heat. Ladle about 4 ounces of the cabbage mixture into the hot pan, as you would for pancakes, and sprinkle the small shrimp evenly on top of each. Cook for about 3 minutes, or until edges start to brown and when jiggled, it slides in the pan. Flip and cook another 2 to 3 minutes until cooked through. Garnish with scallions.
Cook's Note: If Egg Foo Young becomes brown too quickly, finish it by baking in a preheated 350 degrees F oven for a few minutes.

I really don't know why. Somethings are just mysteries.
Betcha you could find your recipe off the internet. Go on ....the internet is full of good things.
I have never made it but I had a fave little chinese greasy spoon that made it with shrimp. I used to order it for breakfast.
