do they only mean animal fat

If you go to your search engine and type in "American Heart Association" they have an online cookbook, very healthy, yummy recipes. There are many recipes online, just type in what you need!

Usually animal fat is the only fat that we eat... with gall stones eating fatty food can bring on an attack... there are a lot of foods that are fat free they also say to stay away from spicey foods too and chocolate .... grilling meat will most times remove the fat from it and you can fry it too with out using fat to fry it in ... you can cook most things without using fat ( baking , boiling. steaming)

i don't know if they mean animal fats, but you can probably get away w/ cooking spray if you want to sautee veggies. otherwise steam them. or broil.
baked chicked. grilled fish/shrimp/turkey burgers.
you may be able to use extra virgin olive oil. just ask the dr. what is ok and what is not.

nope, it means butter / cheeses / sour cream / ice cream. All the good stuff. Keep him basically on fish and skinless chicken and veggies. You can use olive oil when grillin the fish.

you can cook everything without fat.

bake, broil, grill, boil!
