I"m not sure if this is spelled right but talapia (pronounced
tuh-la-pee-uh) is good and very mild. I make an egg wash (couple eggs, a little milk, onion powder, garlic powder, salt and pepper). Dip the fish in the wash and then toss into some bread crumbs that have a bit of onion pwd., garlic pwd. and pepper. Fry in a little bit of butter...it's awesome!

Shark is the best. Try some Mako they are common in Florida. I live in the north east and the have it occasionally in the ethnic stores at a reasonable price. When you grill it it makes it better. Try it with jalapenos and limes. It has the heat and some tang. Yummy!

We grill tuna steaks. Rub with olive oil or melted butter. Grill till "done" to your preference. (we grill till medium, still pink in center) Baste with mixture of lemon juice and melted butter for last 2 minutes of cooking time.

Salmon is good; it's great grilled and has lots of good fat in it. I just BBQ mine on a sheet of foil until it turns opaque.

Halibut is also good, and fresh swordfish can be great grilled.

swordfish is good grilled we do trout on the grill to but rap it in foil so it doesn't stick
