How about Chicken and Potaotes?
Ingredients
1 lb fresh chicken breast, boneless
Seasoned bread crumb or "shake & bake".
2 potatoes
Butter
Milk
Get some fresh chicken breasts, cut it up. Coat it with an egg/water mixture, roll in bread crumbs and bake 30 minutes at 325 degrees.
If you're real lazy, get some shake n bake type coating, and coat the fresh chicken with that mixture. Tastes just as good.
While the chicken is baking, make some fresh mashed potatoes.
If you have a microwave its super easy.
In a microwave safe bowl, add 2 potatoes, washed and cut. Peel if you wish. Poke a few holes in it with a fork.
Fill the bowl with water, put in microwave, cover with saran wrap or waxed paper, microwave on high for 8 minutes.
When the potatoes are done (fork should slide easily into it), carefully drain the water. If you do not have a potato masher, use the fork and break the potatoes down until you can mash it. Add a splash of milk, a gob of butter and a dash of salt. Mix well. For creamier potatoes, add more milk... but not too much milk or it'll turn mushy. Let the potatoes sit 5 minutes before serving.
Then for veggies, you can serve fresh veggies (ie: corn on the cob, carrots) or frozen or canned.. whichever you prefer.

EASY stuff............. Take some cubed steak, stove top stuffing and beef gravy (canned is what I use) Make the stuffing in a bowl with warm water and when water is absorbed, put a large spoonful in the middle of the cubed steak and roll it up. Close it with a toothpick put in a casserole dish and cover with gravy, Put in the oven at 350 degrees and cook for 1/2 hour.
You can do the same thing with chicken breast and chicken gravy but cook the chicken one for 1 hour......... It's so awesome, easy and cheap!

I make a lot of pasta which is easy and cheap, all you need is some jars of sauce, boxes of pasta and some meat or not depending. I keep a few boxes and jars around all the time and some ground beef frozen for when I feel like it. Just brown the meat, add the sauce, season or mess with it as you see fit, and boil the noodles. all done

I humbly request that you aim for more complexity in your choice of sandwich. There are many variations which can be attempted with the grilled cheese-not that theres any thing wrong with the basic grilled cheese.

I know what you mean. I like easy to fix meals too. I went to "Kraftfoods.com", and you can sign up for a free magazine which is published every two months or so. The recipes are so easy, but really good too. You will be surprised at how easy these recipes are to understand and prepare. Good Luck.

*EGG DROP SOUP
Make some ramen noodles, get some eggs and beat them, and then plop them in the soup.
Also, If you go to Wal-Mart around 9 pm, they mark their roasted chickens down to $1 each if they have any left. They can't sell it the next day, and they have to get rid of it. They taste really yummy if you stir-fry them with fajita seasoning and peppers.

TV dinners! Boil 'n bags, packets of instant Lipton noodles (assorted kinds), hamburger helper, cheese and scrambled eggs, english muffin pizzas, tuna fish sandwiches, cheese and lunchmeat, cheese and crackers, green grapes, steak-umms, tater tots...
A favorite snack of mine is a container of sour cream with half a jar of salsa, shredded taco or mexican cheese,
and then dip nachos into it. Yummy!

depends on just how much u want to make at home, or get meal helpers.
u can get a taco or burrito kit with all required ingredients in 1 box.
or pasta with store bought sauce
or frozen packet of chinese stir fry with soy sauce and chilli sauce
