Easy Stroganoff
1 pkg of egg noodle
1 lb of ground beef, preferably lean
1/2 onion, diced
1/2 c sliced mushrooms
1 can cream mushroom soup
1 dollop sour cream, optional
salt/pepper
Cook noodles acording to the package.
While the noodles are cooking, in a skillet add 1 tsp of oil. On med/high heat sautee the onions and mushrooms. Add the ground beef sautee for 5-10 minutes.
Add can of cream of mushroom soup into meat mixture, mix well.
Lower heat to med/low. Cover and let cook for 15-20 minutes, stirring occassionally.
When meat is cooked, turn off heat. Add a dollop of sour cream and mix. Cover and wait for noodles to be cooked.
Drain the noodles, and serve Stroganoff over a plate of noodles.

Morocan Stir Fry
Brown pkg of lean ground beef. Season with chili flakes, cumin, ground ginger (i'm sure fresh ginger would be great too), cinnamon, salt & pepper.
Add red onions, thinly sliced carrots, red peppers, garlic, 1 can of chopped tomatoes with the juice. Simmer for a while until the juice has cooked off a bit and the veggies have cooked. Awesome tasting-a little bit different because of the cinnamon, but that is what makes it unique. Good luck.

Little League Casserole
Layer one medium onion sliced thin in bottom of 9x12 pyrex casserole. Cover with layer of thinly sliced white potato. Top this with one pound of uncooked ground beef, crumbled. Add one can of baked beans to cover ground beef. Cover with aluminum foil and bake at 350 degrees for one hour. Uncover and sprinkle with 8 ounces of shredded cheddar cheese. Bake an additional 10 minutes, or until cheese melts.

My whole family love this ground beef dish I make. It's so simple. You can have this over steamed rice or cooked noodles or pasta. If you are on low carb diet, you can even fill this on lettuce cups. This is how you make it.
2 lb ground beef (or any other ground meat you like)
1 bunch of green onion cut small sections (1/4")
2 tbs minced ginger
1 jalapeno finely minced (optional)
3 tbs soy sauce
1 tbs rice wine (or sherry)
1 tbs sugar
1 tbs canola oil
1 tbs corn starch mix with 2 tbs of water
Heat the oil and brown the meat, add ginger, jalapeno and white part of the green onion cook until the onion is fragrant, add wine, soy sauce and sugar cook for 5 minute, add corn starch mixture cook until corn starch is clear color, stir in green part of the onion.

STUFFED EGGPLANT
1 large eggplant
3 tablespoons vegetable oil
1 pound ground beef, lean
1 onion, chopped
1 clove garlic, minced
8 ounces mushrooms, sliced (i use a whole pound)
16 ounces tomato sauce
1 teaspoon dried oregano
1/4 teaspoon pepper
1 cup shredded mozzarella cheese
Cut eggplant and halve lengthwise. Hollow out inside of eggplant, leaving a sturdy shell for stuffing. Place shells in baking pan and set aside. Heat vegetable oil in a large skillet. Add cubed eggplant and sauté until soft.
Add ground beef, onion, garlic to skillet; brown, drain, set aside. Saute mushrooms until softened and drain. Stir fried ingredients together in skillet with tomato sauce, oregano, pepper. Simmer, stirring frequently, for about 15 minutes. Stuff eggplant shells with meat mixture. Top with mozzarella cheese. Bake at 350° for about 25 minutes.

tater tot/ground beef bake
brown 1-11/2 lb ground beef in microwavable bowl
1 onion chopped..add tocooked beef nuke 2 min
drain well
in lg microwavable dish put beef then a bag of yur fav frozen veggies[ any kind i like ca blend]than add bag toater tots. now take i can cream of mushroom soup add 1/2 c milk to it spread over tater..... now top with 2 cups yur fav cheese[ i use sharp] cover with pastic wrap vent corner...nuke on high 10 min let sit10 min befer servin.. tossed salad an jello make this a meal

1 cup of wild rice or 1 small package of long grain rice

1 cup of celery, sliced
1 medium onion, chopped
1/4 cup of butter
2 pounds of ground beef
1/2 teaspoon of paprika
1/2 teaspoon of salt
1/2 teaspoon of pepper
1/2 teaspoon of thyme
1 bay leaf, crumbled
2 cans of cream of mushroom soup
1/4 cup of milk
1/4 cup of fresh parsley, chopped
Cook rice according to package directions with water and salt. Saute mushrooms, celery and onion in butter for 5 minutes. Brown ground beef in skillet. Mix rice, sauted vegetables and ground beef. Add paprika, salt, pepper, thyme and bay leaf. Stir in soup, milk and parsley. Turn into a lightly greased casserole dish and cover. Cook in a 350 degree oven for 45 minutes.
