I know how to turn it off for each individual mail folder, but every time I create a new folder, it defaults to "show in groups". How do I stop that?

You need to go to view menu and go to arrange by> uncheck Group By.

This is the way you uncheck the group by option.

go to tools and find an option that says show in groups and uncheck it
