Just tell him how you feel, that you really enjoyed his company and you'd like to get to know him better as a friend. To communicate it even more strongly, you could say you're interested in someone else.
I'm not sure why you feel that by giving him your phone number that he would automatically assume you were interested in him sexually. I don't think he would expect that based on just getting a phone number. If he does, you need to decide whether you want a friend like that.

Go out with him and tell him up front that you are not easy and if he is thinking that you are that he needs to try another girl. Explain that you like him for reasons other than that. Most guys are not offended by being told that. If he is let him know why you are concerned.

Next time he calls you tell him how you feel and wat u'd like to expect if he wants a realationship with you. Be very specific so that he gets the picture.
