Fillet Mignon, foil packs of onion and mushroom in butter, grilled asparagus and double baked potatoes in the oven. Have a light salad as a starter. Have a good bottle or two of Burgundy with the meal. There is never any room for desert.

I like a good bbq rib and bbq chicken
To tenderize the meat, boil them for about 1/2 hour for ribs, 20 minutes for chicken pieces (except wing and drumstick). Skip boiling if its boneless chicken.
Whilst its boiling make the sauce.
The sauce I use is:
1 bottle of commercial BBQ sauce
4 cloves fresh Garlic, crushed
1 tsp soy sauce
1 tsp mustard
2 tbsp honey
Mix the ingredients in a bowl to create the sauce. Add dried herbs like basil or oregano for additional flavour.
After boiling the meat, put them on a baking dish to cool.
Generously brush the sauce on the ribs and let it sit for 15-30 minutes.
If you wish to grill, cook for 20-30 minutes, turning over frequently and basting frequently with fresh sauce.
If you wish to put in the oven, bake at 350 degrees for 40 minutes. Cover the meat with sauce, and cover with foil. Bake 20 minutes, lift foil, turnover meat, add more sauce then 20 more minutes or until cooked.

BARBECUE BONELESS PORK RIBS
Meaty pork ribs usually take time to prepare and are full of calories. This quick and easy version keeps the flavor but leaves out the fat and the bones.
1 1/4 pounds lean boneless pork ribs (cut from loin), well trimmed
1 cup purchased barbecue sauce
2 green onions, sliced
Combine pork and barbecue sauce in large baking dish. Turn ribs to coat with sauce. Cover and refrigerate 4 hours.
Prepare barbecue (medium-high heat). Grill pork until cooked through, basting with sauce, turning occasionally, about 18 minutes. Transfer to platter. Sprinkle with green onions and serve
Per serving: calories, 300; fat, 12 g; sodium, 594 mg; cholesterol, 105 mg
Serves 4.

I like to *grill* steaks, *bbq* cut-up chicken and *smoke* ribs, whole chicken, sausage and brisket. Grilling is direct heat, BBQ is indirect heat or low direct heat and smoking is indirect low heat (below 200F).
